I concur @homedecor1 , they really are tastey. I make the Impossible Pumpkin Pie at Thanksgiving because I dont make a great pie crust imo. The bisquick makes its own delishous crust. Try this one!

I made my own creation the other night using a recipe in my Bisquick cookbook. I had a huge smoked turkey leg to make a pot of split pea soup, I found they make the soup as tastey as using smoked ham hocks but alot meatier.

I cut a chunk off the leg before putting it in the soup and made like a really simple fritatta. Actually it is modified from the Impossible Easy Turkey Club Pie recipe.

1/2 cup Bisquick mix

1 cup milk

2 eggs

salt n pepper (I thru in some Mrs Dash too!)

Mix all this together

I sprayed a 8x8 glass brownie pan, put about a shy 2 cups cubed smoked turkey and a can of mushrooms, poured the Bisquick mixture over top, sliced 2 pieces swiss cheese in strips and layed that on top, baked at 400 degrees for 30 mins. It was so good but you can use that Bisquick mixture above and put anything in the baking dish you want, this small amount of Bisquick does not make a crust, so I call it more like a fritatta. Enjoy

(the smoked turkey leg was 5 bucks, I made a meaty split pea soup AND a fritatta from it.)

I love the Impossible Pumpkin Pie and make it every Thanksgiving and Christmas. I don't usually eat the crust on custard-type pies and this eliminates that waste (and effort). It's so easy to make and tastes delicious. I got the recipe as an enclosure with a QVC Christmas card.

How timely!

Just yesterday I made this Bisquick Zucchini "Quiche"! My dad was making this recipe as long ago as the 1970s, and it's even more yummy because it reminds me of him.

If you don't have this book, I recommend it highly. My recipe, though, is older and not in the book, so I'll post it for anyone interested. I doubled the recipe so we could share it. When I made it yesterday, I didn't have any Bisquick type baking mix, so I used a pancake mix. To my palate there was a hint of sweetness due to the pancake mix, but not even enough for DH to notice.

Zucchini Quiche

3 cups zucchini, with skin on, sliced thin or shredded

1 small onion, chopped

1 cup Bisquick

4 eggs, beaten

1/2 cup vegetable oil

1/2 cup grated Parmesan cheese

1 tsp. parsley flakes

1/4 tsp. salt

1/4 tsp. pepper

You really can just dump it all into a bowl and mix by hand, but I mix dry and wet ingredients separately and then combine them. I've never used an electric mixer for it, but you could, as long as you don't overmix.

Bake at 350° for 40-50 minutes, until lightly browned.

@house_cat, I'm drooling on my tablet from admiring your qiuche! 😀 I never would have thought to use pancake mix as a replacement for the Bisquick. I rarely eat breakfast at home and haven't owned a box of pancake mix in decades. This recipe might be helpful if one finds him/herself out of both Bisquick and pancake mix:

(Posted by GiantsLover 1-02-2019 in the QVC Recipe Forum's "HEALTHY HOME MADE BISQUICK MIX AND RECIPES........ENJOY!!!" thread.)

HEALTHY HOME MADE BISQUICK MIX

Ingredients
3 cups all-purpose flour
1½ TBS baking powder
½ TBS salt
8 TBS butter, cold and cubed

Instructions
In the bowl of a standing mixer, add flour, baking powder and salt.

Add the cold, cubed butter and using the paddle attachment, mix the ingredients together on low until the mixture resembles coarse breadcrumbs.

Alternatively, you can combine the ingredients using a pastry blender, two forks or your fingers.

Store the baking mix in the fridge or the freezer, for up to 3 months.
