I have never soaked the split green peas or lentils but I do soak and clean them good. For split pea soup, I add water and chicken broth and cook, then I add sliced carrots, chopped green peppers, chopped onion, celery, chopped up ham, chopped up red pepper, salt and pepper, It comes out so good and when serving, we add sour cream on top. For lentil soup, I add water and chicken broth, and no ham, but add all of the same vegetables mentioned here but I also add a can of stewed tomatoes to that. My mother always put tomatoes in her lentil soup and it perks it up a bit. We put parmesan cheese on the lentil soup. I usually make a big pot of each soup and then put containers in the freezer and it is so handy to have.

I haven't cooked split peas in years, but I was able to get a bag of them yesterday, and I figured I could cut the sodium in some cans of prepared soup by adding some split peas.

BUT- I can't remember how to cook the split peas. I have chicken broth here (I think). Should I use that? Or tap water?

Thanks for your help 🙃

Not wanting to waste ham bones, I'll make pea soup after the Christmas or Easter holidays. I simmer the peas with chicken broth, sliced carrots & celery, along with the ham and two bay leaves. Granted, it's not my favorite soup, but it provides us with many hearty servings.

Some brands must be doing some pre-processing. My bag of Jack Rabbit green split peas only directed me to cook 1/2 hour. I did cook one hour to blend flavors of hambone and vegetables into the peas. I had simmered the bone a couple hours by itself before adding other ingredients.
