      <description>&lt;P&gt;&lt;STRONG&gt;&lt;FONT size="3"&gt;I'm posting an authentic Tiramisu recipe from San Francisco's renowned North Beach district, full of wonderful Italians for way more than a century.&amp;nbsp; Their impact on the city has been felt in so many ways, not the least of which has been in the culinary arts.&amp;nbsp; For your delectation is a wonderful and rich dessert, which I make just a few times a year.&amp;nbsp; Enjoy!&lt;/FONT&gt;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;If you are here to disparage this recipe, due to a certain level of complexity, please don't.&amp;nbsp; Just go on to another forum.&amp;nbsp; Perhaps you'd prefer making a Jell-O centric dessert instead, and that's fine, too.&lt;BR /&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&lt;FONT size="3"&gt;Here we go - This is absolutely&lt;/FONT&gt;&lt;FONT size="3"&gt; wonderful!&lt;/FONT&gt;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;U&gt;North Beach Tiramisu&lt;/U&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Source: The Junior League of San Francisco&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;North Beach is an Italian enclave in San Francisco with sidewalk cafes, coffeehouses and restaurants.&amp;nbsp; My first meal there was at the “Spaghetti Factory” located in an alley, sometime in the mid-60s.&amp;nbsp; One of the desserts often enjoyed with coffee or espresso on our cross town trips to North Beach was Tiramisu.&amp;nbsp;&amp;nbsp; I make this recipe about twice a year and thought to share it with you.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;48 small ladyfingers or finger-sized slices of pound cake&lt;/P&gt;&lt;P&gt;2 Tbs instant espresso powder&lt;/P&gt;&lt;P&gt;1 Tbs plus ¼ cup cane sugar&lt;/P&gt;&lt;P&gt;1 cup not water&lt;/P&gt;&lt;P&gt;2 large eggs, separated&lt;/P&gt;&lt;P&gt;4 Tbs light rum or Marsala wine&lt;/P&gt;&lt;P&gt;6 oz mascarpone cheese, room temp&lt;/P&gt;&lt;P&gt;1 Tbs fresh lemon juice&lt;/P&gt;&lt;P&gt;1 tsp pure vanilla extract&lt;/P&gt;&lt;P&gt;2 cups heavy cream&lt;/P&gt;&lt;P&gt;1 Tbs powdered sugar&lt;/P&gt;&lt;P&gt;12 oz bittersweet chocolate, grated&lt;/P&gt;&lt;P&gt;(If you have a good quality semi sweet chocolate, use it)&lt;/P&gt;&lt;P&gt;¼ cup unsweetened cocoa powder for dusting&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Preheat oven to 325.&amp;nbsp; Place the ladyfingers or pound cake slices on a baking sheet and bake for 2-3 minutes.&amp;nbsp; Remove from the oven and let cool.&amp;nbsp; In a small bowl, combine the espresso, 1 Tbs sugar, and hot water. Stir in 3 Tbs of the rumor Marsala and set aside.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;In a large bowl, beat the egg yolks and ¼ cup sugar until the mixture forms a slowly dissolving ribbon on the surface when the beaters are lifted.&amp;nbsp; With a wooden spoon, blend in the cheese until smooth.&amp;nbsp; Add the remaining 1 Tbs rum/Marsala, the lemon juice, and vanilla.&amp;nbsp; In a deep bowl, beat the cream with the powdered sugar until soft peaks form.&amp;nbsp; Fold into the egg mixture.&amp;nbsp; In a large bowl, beat the egg whites until stiff, glossy peaks form.&amp;nbsp; Fold into the cream mixture.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;To assemble, dip the ladyfingers/pound cake slices, one at a time, into the espresso (do not soak) and place in a 9 x 13” glass baking dish.&amp;nbsp; Sprinkle half of the grated chocolate over the ladyfingers.&amp;nbsp; Spread half of the cream mixture over the fingers.&amp;nbsp; Add another layer of ladyfingers dipped in the espresso mixture and the remaining grated chocolate.&amp;nbsp; Spread the remaining cream mixture over.&amp;nbsp; Dust the top with cocoa powder.&amp;nbsp; Place in the refrigerator for 4 hours. Serve and Enjoy!&lt;/P&gt;</description>

I love tiramisu and consider it one of the tests of a good a Italian restaurant. This recipe is very good.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;EASY TIRAMISU&amp;nbsp;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&lt;U&gt;Ingredients&lt;/U&gt;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;2 packages Italian lady fingers (I get them from Amazon)&lt;/P&gt;&lt;P&gt;4 to 6 cups strong brewed coffee, cooled&lt;/P&gt;&lt;P&gt;1 jigger dark rum&lt;/P&gt;&lt;P&gt;1 cup white sugar&lt;/P&gt;&lt;P&gt;1/2 cup chocolate syrup&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 (8 ounce) package cream cheese, softened&amp;nbsp;&lt;/P&gt;&lt;P&gt;2 cups heavy whipping cream&lt;/P&gt;&lt;P&gt;Cocoa powder or shaved dark chocolate, or both&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&lt;U&gt;Directions&lt;/U&gt;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Beat sugar, chocolate syrup and cream cheese in a large bowl with an electric mixer (use the whisk beater if you’re using a stand mixer) on medium speed until smooth. Scrape bowl to ensure cream cheese is fully incorporated.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add whipping cream gradually; beat on medium, then high speed until stiff peaks form, like whipped cream.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Mix cooled coffee and rum in a shallow dish, like a pie plate.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Quickly dip the top and bottom sides of each lady finger in the coffee mixture, then place side-by-side in a 9” x13” baking dish (or a disposable one), covering the entire bottom of the dish. (The lady fingers absorb the coffee mixture quickly, so don’t let them get too soggy.)&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Spread half the cream mixture over the ladyfingers.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Dip the remaining lady fingers in the coffee mixture and arrange in a second layer. Spread the remaining cream mixture over the second layer.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Cover and refrigerate at least one hour, but no longer than 24 hours to set dessert and blend flavors.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Before serving, sprinkle the top with powdered cocoa and/or dark chocolate shavings.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;This freezes very well.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;My tiramisu recipe:&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Tiramisu&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Ingredients&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;1 Cup heavy cream— 1 container (8 Ozs.) mascarpone cheese— 1/2 Cup sugar— 1/2 Cup milk — 1 Cup cold espresso coffee prepared with 2 Tbsps. sugar — 1/4 Cup Kahlua (optional) — 2 pkgs. each (3 Ozs.) soft lady fingers — 2 Tbsps. unsweetened cocoa powder — 1/2 of a 1 Oz. square semi sweet chocolate&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Metal bowl &amp;amp; beaters should be chilled in freezer for best whipping results&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Method&amp;nbsp;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;1) In large chilled bowl, beat heavy cream until stiff peaks form &amp;amp; set aside.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;2) In large mixing bowl, mix by hand mascarpone cheese with sugar until fluffy. Using a hand mixer, beat in milk. Fold whipped cream into cheese mixture using a rubber spatula. May refrigerate at this time.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;3) In a medium mixing bowl, combine Kahlua &amp;amp; coffee. Separate lady fingers. Line an 8” X 8”X 2” shallow casserole dish with 1 pkg. ladyfingers. Drizzle 1/2 of Kahlua/coffee over the ladyfingers.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;4) Spread 1/2 of cheese mixture over ladyfingers. Using a sieve/strainer, sift cocoa powder over mascarpone mixture. Arrange remaining ladyfingers on top of mascarpone in opposite direction of bottom layer. Drizzle with remaining coffee mixture. Top with remaining mascarpone. Using a hand grater, grate semi sweet chocolate over mascarpone top.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;5) Cover tightly &amp;amp; refrigerate until serving time.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Yield: 12 servings&amp;nbsp;&lt;/P&gt;</description>
