The grocery store had wild-caught haddock on sale this week for 6/lb. So I bought some for Eddy, my furbaby, and me this week.

Not being much of a cook, I asked the the guy how to cook it. He listed many ways, but I knew I had to go plain for Eddy's sake. He did tell me to bake it for 20-25min at 350*. So I nuked just to soften some carrots and potatoes. Then put them along with some cherry tomatoes and green pepper slices in a sheet pan, seasoning with salf, pepper, cumin and tumeric after rubbing everything with olive oil. I then 'dried' the fish with a paper towel, then rubbed in olive oil, adding salt and pepper. Baked it as recommended for twenty minutes, then shut oven off and cooked for remaining five.

I grew concerned as I skimmed through various cookbooks all stating to bake at half that time at 400* or 415*. But, realized too late to change the game plan! When I took it out, it looked perfectly cooked. Dished Eddy's out and cooled in freezer for a minute or two before serving him. You're gonna laugh but I sat down next to him as he began to eat, asking him if it was good! I really needed his a-okay!!! Then the tail wagged, and wagged, and wagged as he chased the bowl, continuously licking the now empty dish with only the remaining odor of today's lunch!!!

Well, just wanted to share it was really good, even the naturalness of the veggies were a yummy change. Gotta thank that man at the grocery store! And yes, I depend on my dog's opinion if a recipe stays or go's!

My husband likes this recipe that calls for topping with Ritz cracker crumbs and olive oil:

2 1" thick skinless haddock filets

1/2 cup Ritz cracker crumbs (about 10 crackers)

1 1/2 tbsp olive oil

1/2 tbsp Dijon mustard

1/2 tbsp lemon juice

Pat haddock dry with paper towels and place in 9x9" baking dish sprayed with PAM.

Stir olive oil, mustard, and lemon juice in dish. Spoon over top and sides of filets. Press cracker crumbs on top of filets. Bake at 450 degrees for 15 minutes.

Haddock has a pleasant flavor. It's often included on Friday night fish frys in the Midwest, but at home, I prefer baking it.

Never have cooked or eaten haddock --but I do love most fish. I bought some sea bass cheeks to cook---very pricey things about $15 /lb. You cook them like scallops---those are very, very pricey per pound--and good gravy---were they delicious!! Served with roasted veggies and rice with a butter lemon sauce---
