Addbeef and onions. Cook over high heat stirring constantly for 5 minutes. Mix in the cheese. Test for seasoning (at this point I add a little minced garlic). In a 9x13 inch pan, spread HALF the macaroni. spread the meat mixture over it and top with remaining macaroni.&lt;/P&gt; &lt;P&gt;&lt;STRONG&gt;Cover with the following sauce:&lt;/STRONG&gt;&lt;/P&gt; &lt;P&gt;2 Tablespoons butter&lt;/P&gt; &lt;P&gt;2 tablespoons flour&lt;/P&gt; &lt;P&gt;1/2 teaspoon salt&lt;/P&gt; &lt;P&gt;dash of pepper&lt;/P&gt; &lt;P&gt;1 cup milk&lt;/P&gt; &lt;P&gt;1 egg yolk&lt;/P&gt; &lt;P&gt;1/4 cup Parmesan cheese&lt;/P&gt; &lt;P&gt;Melt the butter in a saucepan. Blend in the flour, salt and pepper. GRADUALLY add the milk. Stir steadily to boiling point. Cook over low heat for 5 minutes. In a bowl, beat together the egg yolk and cheese. Add the hot sauce mixture stirring constantly to avoid curdling. Pour over macaroni. Bake 30 minutes at 375*. Let set 5-10 minutes after removing from the oven.&lt;/P&gt;</description>
