    <description>&lt;P&gt;This recipe originated before the concern about using fresh raw eggs; eggbeaters can be substituted.  This is another easy refrigerator dessert, easy and delicious!&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;&lt;STRONG&gt;&lt;SPAN style="text-decoration: underline;"&gt;Pineapple Dessert&lt;/SPAN&gt;&lt;/STRONG&gt;&lt;BR /&gt; &lt;BR /&gt; 1/2 lb vanilla wafers               &lt;BR /&gt; 3 T melted butter               &lt;BR /&gt; 1/2 t vanilla                   &lt;BR /&gt; 1-1/2 c crushed pineapple           &lt;BR /&gt; 1/8 t salt                   &lt;BR /&gt; 1-1/2 c macadamia nuts, chopped, or walnuts or pecans&lt;BR /&gt; 1/2 c butter&lt;BR /&gt; 2 c powdered sugar&lt;BR /&gt; 3 eggs, equivalent eggbeaters to be safe&lt;BR /&gt; 1/2 pint whipping cream&lt;BR /&gt; 1 T sugar&lt;BR /&gt; 1/2 c butter&lt;BR /&gt; 2 c powdered sugar&lt;BR /&gt; 3 eggs, equivalent eggbeaters to be safe&lt;BR /&gt; 1/2 pint whipping cream&lt;BR /&gt; 1 T sugar&lt;BR /&gt; &lt;BR /&gt; Crush vanilla wafers and mix with 3 tablespoons butter, reserving 1/4 c crumbs.  Press into 9 x 12 pan. &lt;BR /&gt; &lt;BR /&gt; Cream butter and powdered sugar together; add beaten eggs and vanilla.  Spread over crumbs.  Sprinkle nuts and pineapple over second layer.  Beat cream, add vanilla, sugar and salt.  Spread over pineapple-nut mixture layer.  Top with remaining crumbs.  Chill for at least one hour.  Serves 8.&lt;/P&gt;</description>
