      <description>&lt;P&gt;I know this is crazy, but if you have old Betty Crocker cookbooks could you please check the index to see whether there&amp;nbsp; is a recipe for chicken marengo.&amp;nbsp; I recall it may be in Betty Crocker's New Good and Easy Cookbook but it may have appeared in subsequent versions.&amp;nbsp; I donated my copy a few years ago and made this dish often in the past and now I am hoping to make it again.&amp;nbsp; There are lots of used copies of BC cookbooks out there so I am hoping to confirm which one it is in.&amp;nbsp; I searched the internet extensively including Amazon where not&amp;nbsp; all the older editions&amp;nbsp; have the "look inside" feature.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I know this is silly -- there are lots of chicken marengo recipes on the web that are probably even better!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;TIA&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;I have "Betty's Crocker's Cokbook" and it does not have that recipe. I can't find a date inside the book but I got married in 1970 so it's at least that old.&lt;/FONT&gt;&lt;/P&gt;</description>

Everyone&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I am going to try and borrow the Betty Crocker Chicken cookbook from the library.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;That vintage recipe website is worth knowing about.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;When I track down the recipe, I will post it.&amp;nbsp; I recall it called for chicken parts vs. pieces, though the chicken penne one sounds good.&lt;/P&gt;</description>

      <description>&lt;P&gt;In case you need a recipe for this dish before you find the original, here is one from an old copy of&amp;nbsp;&lt;EM&gt;Cook's Country&lt;/EM&gt;:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;3 lbs bone-in, skin-on split chicken breasts, patted dry&lt;/P&gt;&lt;P&gt;1 tbsp extra-virgin olive oil&lt;/P&gt;&lt;P&gt;1 onion, chopped&lt;/P&gt;&lt;P&gt;4 tsp minced garlic&lt;/P&gt;&lt;P&gt;10 oz thinly-sliced mushrooms&lt;/P&gt;&lt;P&gt;1/2 tsp dried thyme&lt;/P&gt;&lt;P&gt;2 tbsp tomato paste&lt;/P&gt;&lt;P&gt;28 oz canned diced tomatoes, pulsed 3-4 times in food processor&lt;/P&gt;&lt;P&gt;3/4 cup chicken broth&lt;/P&gt;&lt;P&gt;1/2 cup brandy&lt;/P&gt;&lt;P&gt;1/4 cup chopped kalamata olives&lt;/P&gt;&lt;P&gt;1/4 tsp red pepper flakes&lt;/P&gt;&lt;P&gt;3 tbsp butter&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Season chicken with salt and pepper.&amp;nbsp; Heat oil in Dutch oven over medium-high heat until just smoking.&amp;nbsp; Cook chicken skin-side down until deep golden brown.&amp;nbsp; Flip and brown on other side.&amp;nbsp; Place on plate.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Cook onion in remaining fat over medium heat until softened.&amp;nbsp; Stir in garlic.&amp;nbsp; Stir in mushrooms and thyme.&amp;nbsp; Cover and cook for 10 minutes, stirring occasionally.&amp;nbsp; Stir in tomato paste until thickened.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Stir in tomatoes, broth, brandy, olives, and pepper flakes and bring to boil.&amp;nbsp; Add chicken skin-side up.&amp;nbsp; Place pot in 450 degree oven until chicken reaches 160 degrees, about 1/2 hour.&amp;nbsp; Place chicken on platter.&amp;nbsp; Stir butter into sauce and serve with chicken.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

However I found this Chicken Marengo recipe in an old church cookbook from maybe the '60s or '70s that used to be a family favorite:&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Chicken Marengo&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;2 quartered fryers&lt;/P&gt;&lt;P&gt;6 slices diced bacon&lt;/P&gt;&lt;P&gt;3/4 C flour&lt;/P&gt;&lt;P&gt;2 tsp salt&lt;/P&gt;&lt;P&gt;1/4 tsp pepper&lt;/P&gt;&lt;P&gt;1 C chopped onion&lt;/P&gt;&lt;P&gt;1 small clove garlic, minced&lt;/P&gt;&lt;P&gt;1 4 oz can mushrooms&lt;/P&gt;&lt;P&gt;2 C tomatoes&lt;/P&gt;&lt;P&gt;1/4 C chopped parsley (one would assume they mean fresh)&lt;/P&gt;&lt;P&gt;Few dashes red pepper&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Fry bacon almost crisp in large frying pan. Season and flour chicken. Add to drippings, add butter if more drippings are needed. Brown chicken, then sautee onion, garlic, tomatoes, parsely and red pepper, stirring constantly. Pour over chicken in a baking dish. Sprinkle with bacon chips and mushrooms. Bake until tender, about 2 hours at 350F. Garnish with more parsley.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>
