I have developed a yummy recipe. This is a great little dessert for low carbers.

1 can coconut milk

1.5 tbsp high quality unsweetened cocoa powder

1 tbsp unsweetened coconut flakes

2 packets stevia

1/4 cup chia seeds

1 tsp vanilla extract

Put all the dry ingredients in a bowl and whisk to blend. Add the coconut milk and vanilla and whisk. Put it in a covered container and let it set up several hours or overnight in the fridge. It will keep for a week.

So is chia pudding, and not just for low carb eating. Chia seeds are highly nutritious and also very high fiber. They’re great in a smoothie, for some added nutrition. They are nearly flavorless therefore you can do a lot with them.
