Thanksgiving of 2017 I started adding a container of Veg. Cream Cheese to my green bean casserole and now the family wants it all year long. Do not even want to think about the extra calories with the other ingredients as well.

My DDIL will eat any leftovers of it now for breakfast she likes the new version so much.

I'll offer the same as I did for a Thanksgiving request. Cucumber salad or a real salad if you think people would eat it. Easy to prep either ahead of time and keep in the refrigerator.

Cucumber salad is just slicing cucumbers (I peel but you don't have to) and toss them with vinegar and oil and some spices (we use salt, pepper, and oregano). You can also throw in tomatoes and any other vegetable you like if you don't want just cucumbers.

Another Italian tradition is smelts or some type of fish as a side or appetizer as well if your guests like seafood or are tired of veggies.

(not my photo, but they look similar to this)

baby whole carrots in a saffron sauce.

whole baby carrots

chicken broth

sugar

butter

saffron

salt

place whole baby carrots in a shallow pan with chicken broth (do not cover them with chicken broth.) lightly sprinkle with sugar (substitute honey if you prefer). add a few pinches of salt. slow simmer them until tender crisp. add about 2 T of butter. use about 1/8 of a teaspoon of crushed saffron, maybe slightly more. sprinkle with chopped fresh parsley. they have a beautiful taste and color. very simple to make.

i usually buy the fresh whole carrots at the fresh market. if you cannot find them, substitute baby carrots.

*Note* This recipe uses fresh sweet potatoes, but for time and ease, I make with the large can of sweet potato chunks.

And of course, the bourbon can be left out, but we love the flavor it gives this dish and the alcohol cooks off.

Jack Daniels Sweet Potatoes

Ingredients

1 long strip orange peel

1/3 cup bourbon

1/4 teaspoon nutmeg, freshly grated

1 3 to 4 inch cinnamon stick

4 tablespoons butter

1 cup brown sugar

3 cups water

4 large sweet potatoes

Preparation

Wash and dry sweet potatoes and bake at 400° for one hour, until potatoes are soft to the touch.

I like to use a recipe from Wegman's, you can use two packages of their cubed butternut squash or cut up a whole squash and cube it yourself. Then add two chopped red onions and coat the squash and onion with Wegman's basting oil, their oil has a lot of different herbs in it, or any basting oil you have. I put the veggies on a baking sheet with foil so they don't stick. I like reynolds non stick foil. Bake at 400 degrees for about 35 minutes. when done put in a serving dish and gently stir in a cup of craisins. This dish is very tasty.
