My mother made a turkey rice soup that was to die for and I still make it now. Put the turkey bones in a soup pot and bring to a boil, then turn to simmer for about an hour. This is really important because the bones have a lot of flavor and it also helps to remove any leftover meat. Remove the bones and add rice (adjust the amount of rice to the amount of liquid) add leftover turkey meat and the secret ingredient is add leftover dressing. If you don't have any leftover get a box of Stove Top to substitute. The dressing is so important because it adds spices and flavor. Plus it will help thicken your soup. Cook until rice is done. You can add more liquid if you think it is too thick. My mother was a southern cook who didn't follow "a cup of this, a tsp. of that" it was always a handful of this and eyeball it so there is no "exact" anything. All I know is we always loved when she made it and my family now enjoys it. It's great on a cold afternoon or evening. Enjoy.

Mmm Mmm - cannot wait to do dinner all over again tonight!!! Our's was DE'LISH yesterday so I know it'll be as good tonight!

DH smoked the turkey breast on the grill w/apple chips marinating throughout the process. I fixed roasted carrots, made whole cran sauce w/a touch of allspice, trad dressing, of course mashed potatoes, turkey gravy.

DH also made a Martha dessert, similar to choc lava cakes, a beautiful ganache on top. He really knows his stuff!!!!

Tomorrow my big Black Friday purchase is going to be $1.99 butter (woo-hoo!). Enjoy the rest of your weekend my friend!

Hi @momtochloe,

Great idea for a post! Thank you for starting it.

I always like to set aside some turkey for a couple of months from now. I'll cut it up into chunks and stick it in a baggie in the freezer.

Then, on some snowy day, I'll make it into "Dad's Leftover Turkey Pot Pie". It is a good recipe I found on "Allrecipes".

I might try making my leftover dressing into "stuffing waffles". I saw it done on tv and it looked interesting. This year, I tried the "Simple is Best" Stuffing Recipe (from the internet). For me, the name was accurate. Even though it was cooked outside the bird, it had lots of flavor.

This doesn't have anything to do with leftovers but I would like to share the results of something special I tried this year, dry brining my turkey. I had about a 15 pound bird and two days before cooking I rubbed a half a cup of kosher salt all over it and placed it in a plastic brining bag, in my fridge. Then, before baking, I patted it dry. So I didn't have to open my oven door and baste, I put softened butter inbetween the skin and meat. Since I was making my dressing outside of the bird, I stuffed it with apples, onions and lots of parsley.

I have to admit it took a lot of faith this process would turn out like people said it would turn out. However, it did! Neither the turkey or the gravy was salty and the breast was flavorful and not dry. It worked out so well that I will do it again the next time I make a turkey.

Just saw an idea in a magazine---individual turkey pot pies, with dressing as the topping, instead of crust, and the filling made with leftover green beans, carrots and peas from the day before.

The recipe did suggest making crust to line the bottoms of small-size cast iron pans, but I'd try to do without that or use those little frozen phyllo pastry cups.

Also, I think these could be made in many other types of small-size vessels than just cast iron, such as au gratin dishes or oven-safe ceramic soup bowls.

I guess anyone who can make chicken pot pie can make the little turkey kind, too! LOL!!
