stuffing or dressing?

i like just the plain bread, celery and onions plus the seasonings.

but i am just used to that because that is what my grandmother and mother made.

I found this on YouTube. It is very near what I have done for a long time. There are a few differences but not any that would significantly change either the texture or the flavor of the dressing.

Turkey meat

2 jiffy corn bread mix

2 bags of croutons

2 Cans cream of chicken

4 stalks of celery chopped

1 large green bell pepper chopped

1 large onion chopped

3 large eggs

1 box chicken broth

1/2 stick melted butter

Seasonings: Maggi pollo*, pepper, onion powder , garlic powder , sage , salt

1 smashed garlic clove

1 of the celery stalks for broth

2 slices of bell pepper for the broth

A few slices of onion for broth.

This is on YouTube. Author/videographer is Gina Young, if you care to watch and see how she does it.

*Maggi Pollo is poultry seasoning.

In this house it’s dressing, and I make it the same way as both grandmothers, using a combination of cornbread, biscuits, saved heels of bread, and the leftover hamburger or hot dog buns. Lots of onions and celery sautéed in butter, adding salt, pepper, sage and hot chicken broth to the bread mixture and stirring. Nothing is measured, and what I make is mixed and stored in a 25 cup bowl.

I shape into patties and bake on a baking sheet.

Since my grandmothers always baked huge turkeys, the neck and giblets were simmered and the meat added to the dressing.

A touch of cloves. I got that from Ina.

But nothing else fancy: toasted bread, cornbread, too, celery, onion, touch of sage, broth (not plain water), melted butter. May or may not add poultry sausage.

In my house it's called stuffing. I make a very simple bread stuffing as that is what my mother made. It contains stale bread, Bell's seasoning, onion, celery, salt, pepper, melted butter and an egg. Then she would pour boiling water over it all and put a lid on to steam it and soften the bread. Next morning, she would stuff the turkey and roast.

I have tried many other varieties of stuffing and my hubby always prefers my mother's bread stuffing.

Used to make from scratch as well. But that stove top additions ( while being less healthy) works very well. I saute sweet italian sausage, leeks, celery, diced apple and some crasins when everything is warmed through. add it to prepaired stove top, put it in a greased baking dish and toss it in the oven for a while. add chick broth as you like.

PA Dutch filling is certainly hearty, but it is certainly not dark and dusty tasting. I think you had some sort of sausage or liver version of filling, and not a good version. My filling is more like the consistancy of a commercial stuffing. If you ever have good PA Dutch filling, it will spoil you for anything else.
