Can anybody help me? I’d like to bake my brand new daughter in law a birthday cake. I want to show her I care by doing this. I know she likes red velvet cake but I’m open to any really good cake recipe anybody knows of. I’d deeply appreciate it. Thank you.

If she likes red velvet cake, that is a good choice. To dress it up, you might consider doing a 2 or 3 layer cake, and use a fruit filling, such as raspberry, strawberry, or even a mixed berry filling in between the layers. Cream cheese icing would be a great choice for the frosting, and you could sprinkle it with some coconut, if she likes that. Some fresh, sugared raspberries, or even grated chocolate on the top for garnish would be great. Good luck and just have fun and add your own creativity! This time of year, I also enjoy a good pumpkin cake with cream cheese icing! Would love to know what you finally choose.

Growing up.....back in the day of baking from scratch....my mother always baked a white cake with lemon filing and buttercream frosting....yum! If your DIL does not like lemon that won't work but just a thought. If she likes chocolate I have a very moist chocolate-chocolate-chip cake recipe....but that bakes in a 9x13 pan.

Cut out 2 parchment paper circles that will fit inside each pan and spray them with some cooking spray. Make sure to spray some cooking spray up the sides of the pans too.

In the bowl of your mixer, add the flour, sugar, cocoa powder, salt, baking powder, baking soda and using the paddle attachment mix everything together until well combined, on low speed.

In a large bowl mix together the buttermilk, coconut oil, eggs, and vanilla extract. Whisk in the coffee and food coloring.

Add the wet ingredients to the mixer bowl and mix everything over medium speed for about 2 minutes, until everything is well combined. Scrape the bottom of the bowl with a spatula and mix as needed. Add more red food coloring as needed to get to the desired color. Pour the batter into the 2 prepared pans, equally.

Bake the cakes for 30 to 35 minutes. To test if the cake is done, insert a toothpick in the middle of the cake and if it comes out clean, it's done. Let the cake cool in the pans for about 30 minutes, then turn them out onto a cooling rack or a cutting board and cool completely.

While the cake is cooling, make the cream cheese frosting. In the bowl of your mixer whip the whipping cream until soft peaks form. Remove from mixer bowl and refrigerate until ready to use.

In the bowl of your mixer, beat the cream cheese together with the vanilla extract and icing sugar, until smooth. Fold in the whipping cream gradually until well combined.

To assemble the cake, cut the top part of the cake first and crumbled it up in a bowl, we'll use this for decoration after.

Cut each cake into 2 pieces. Start by placing 1 cake layer onto your serving cake platter, then spread some of the cream cheese frosting, about ¼, evenly over the cake layer. Repeat with remaining cake layers. Using a spatula, spread the cream cheese frosting evenly over the top of the cake and up the sides. Decorate the cake with the remaining cake crumbs if desired.

Refrigerate until ready to serve.

@turquoise blue....Red Velvet cake is a great chocolate cake and pretty when baked in a layers. I would not add anything like berries, filling, to the cake it needs nothing.

I am at work and cannot post my recipe but I see that @RespectLife gave you a recipe....it is different than the one I use but sounds good as well.

Beat butter, sugar and eggs for 5 minutes in the bowl of an electric stand mixer, until very light and fluffy. Beat in chocolate and vanilla. Stir in about 1/3 of the dry ingredients, half of the sour cream, another 1/3 of the dry ingredients, the rest of the sour cream, and finally the remainder of the dry ingredients. Stir just until mixed. Gently, stir in hot coffee and then pour equally into prepared pans or pan. Drop each pan several times onto the counter top from a height of about 12” to release air bubbles. Bake at 350 F for 35 minutes or until a toothpick comes out clean. Cool pans on a wire rack for 15 minutes. Run a knife around the edge, turn out and cool completely. Enjoy!

Chocolate Fudge Frosting

Frosts 1-10x15” sheet or 2-10x2” round layers

2-1/4 cups granulated cane sugar

1-1/2 cups heavy cream

9 oz unsweetened chocolate, coarsely chopped (Guittard or Ghirardelli-I prefer Guittard)

12 Tbs (1-1/2 sticks, 6 oz) unsalted butter, sliced in Tbs pieces

3 tsp vanilla extract

In a heavy saucepan, combine the sugar and heavy cream. Place over moderate heat and, stirring constantly, bring to a boil. Reduce the heat and simmer for 10 minutes without stirring. It won’t look like much at this stage. Remove from the heat and stir in the chocolate, butter and vanilla, continuing to stir until the chocolate and butter melt. Place in a metal bowl and cool to room temperature, stirring occasionally. Refrigerate, stirring often, until thickened and of spreading consistency. Use to frost cake when frosting has reached this stage. This frosting not only tastes like fudge, it seals the cake nicely, giving it a longer shelf life.

Enjoy~Rebecca

It was so yummy.

Hershey’s Perfectly Chocolate Cake

2 cups sugar

1-3/4 cups all-purpose flour

3/4 cup HERSHEY'S Cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

Heat oven to 350°F.
