    <description>&lt;P&gt;My grandchildren love these as a healthy snack alternative.&lt;/P&gt; &lt;P&gt;Servings:  4&lt;/P&gt; &lt;P&gt;2 - 5" sweet potatoes&lt;/P&gt; &lt;P&gt;Olive oil spray&lt;/P&gt; &lt;P&gt;1/2 t. herb blend&lt;/P&gt; &lt;P&gt;Peel and cut sweet potatoes in half diagonally.  Use a mandolin or other slicer to cut into 1/8" slices.  Put slices in a bowl of ice water for about 15 minutes to wash off some starch.  Pat dry with paper towels.&lt;/P&gt; &lt;P&gt;Heat oven to 425 degrees.  Line cookie sheet with aluminum foil.  Spray generously with olive oil, and put the sweet potato slices in one layer.&lt;/P&gt; &lt;P&gt;Bake about 8 minutes and then carefully turn over.  Bake another 6 minutes.  Let cool on a rack, and sprinkle with the herb blend.&lt;/P&gt;</description>
