Does anyone have a good, simple & easy cucumber sandwich recipe? I've tried a couple...the latest that had hidden valley ranch dressing mix in it. Just doesn't taste right. Having a hard time finding something on the internet. Some recipes I've come across have worcestershire sauce in them. Is that common?

@ScrapHappy, from the garden cake and tomato sandwiches are the best. My father was a huge veggie gardener. We always made sandwiches of tomatoes and cake with Miracle Whip and lots of black pepper, refrigerated and then ate them. Makes me homesick! LM

I have had them with the cucumbers sliced and with them grated. They have had the cream cheese, mayonnaise and dill or chives or green onions, shallots. The butter is important if you make them ahead to be a barrier to keep them from getting soggy. Some people use the spreadable cream cheese instead of the butter.

doxie

Beat at medium-high speed with an electric mixer until creamy. Add lemon zest, dill, and salt, beating at low speed to incorporate. Place cream cheese mixture in a piping bag fitted with a small open-star tip (Wilton #21).

Using a 1¾-inch square cutter, cut 4 squares from each bread slice. (Place squares in a resealable plastic bag, or cover with damp paper towels to prevent drying out while working.)

Using a mandolin* on a very thin setting, cut 32 paper-thin cucumber slices. Lay cucumber slices on paper towels, and blot dry.

Pipe cream cheese mixture around the edge of 8 bread squares, and then fill in the centers. Lay 4 cucumber slices on each bread slice, letting cucumber slices hang over edge of bread. Top with another bread square.

Serve immediately, or cover sandwiches with damp paper towels until ready to serve.

Notes

*We used a Kyocera mandolin, which is available at surlatable.com. You can also use a small, sharp paring knife to cut cucumber as thinly as possible.

• Cream-cheese mixture can be made a day in advance and refrigerated in a covered container. Let come to room temperature before using. Bread squares can be cut a day in advance and stored in a resealable plastic bag.

Whipped cream cheese till soft, add a bit of fresh dill since it is so powerful, and spread the crustless bread with it, then layer super thin slices of cucumber sprinkled with a bit of kosher salt. Done.

I haven't made this, but it's the Pioneer Woman's recipe, Ree Drummond... I just saw it on her show this morning. I haven't made it, but it sounds simple and good to me. If you Google Pioneer Woman Cucumber Sandwiches, you can watch the video. I think I might try this one:

Pioneer Woman Cucumber Sandwiches

Ingredients

8 slices white sandwich bread

2 tablespoons butter, softened

1/2 English cucumber, peeled and thinly sliced

1/4 cup mayonnaise

1 tablespoon finely chopped chives

1 teaspoon yellow mustard

Kosher salt and freshly ground black pepper

Directions

Spread one side of each slice of bread with a thin layer of butter.

Cucumber sandwiches sound really good...I have never made them but have sampled at a couple of parties...seeing this post reminded me of a commercial about Ethel meeting the Queen and serving cucumber sandwiches....Whatever you do just don't add any Franks's RedHot Sauce!!!
