I'm sure you can. I love it so much I just slice it up and eat it. Then again, I do that with most foods. The farthest I've gone is to spread it on bread in a sandwich in place of mayo. Yummy! Hope you get lots of Ideas!

For guacamole I mash the avocado then add small amount of olive oil, lemon juice, salt and chopped onion. I also like to make egg salad with mashed avocado instead of using mayonnaise but remember avocado has a lot of calories and the health benefits won't mean diddly squat if you eat too much of it

I make a avacado/jalapeno salad dressing, not just for salad but I've put it on

grilled chicken and beef. I put avacado in any type of salad

I make. I sometimes slice them up and sprinkle with turmeric & pepper and eat

as a side dish. A couple days ago I made some chicken enchiladas, topped with

diced avacado before serving. I put them on tacos, fajitas, nachos. I've added mash

avadado to devil egg mixture.

A couple of Tex-Mex restaurants we visit serve a avacado salsa that is to die for.

I've been searching for a copycat recipe of it.

Oh, and smoothies. When I have an avacado that is very ripe, I'll add it to a

smoothie.

I guess you could even batter and deep fry - Texans will deep fry anything,

but not something I'm interested in trying.

But talking about this makes me think about zucchini pancakes that I love -

wonder how mashed avacado added to the batter would work?? Will have to

try that out.

edit for SOUPS...cut in small chunks and add to soups. I especially like them with tortilla soup and tomato soup. I'll be quiet now.

delicious mashed on toast with an egg over top. I put them in my smoothies and if I can't use them before they get too ripe or even if they are too ripe, I freeze them for my smoothies. they can go into brownies altho i haven't tried that and also to make a choc moussse--haven't tried that either.I eat prob 1/8 of one at a time. I even chunked them up and mixed them into a chicken burger that was so yummy. In any sandwich or on top of chili or tortilla soup too. In any salads or meal bowls--I use them all the time and very often.

I love mixing an avocado with red onion, tomatoes, small white beans, basil and a touch of balsamic vinegar. I have also used it on my hair as an overnight conditioner when I ran out of coconut oil. Enjoy!

I just remembered, when I had guests over, I would serve each guest, 1/2 of an avocado stuffed with a seafood salad and squeeze a little lemon juice over it. Yummy!

I love avocados. I eat them plain or add a light sprinkle of salt. They're great alone or in sandwiches. I love an omelette with avocado and some cheese, like a white cheddar, Swiss, or cream cheese. They're also fantastic in salads, especially with spinach, strawberries, and some feta cheese. If you have a few, guacamole is a fantastic option.

(Recommended by a WW member). I put some of the avacado on them and a wedge of cow cheese on top of that. Really tasted good for lunch. Lasted me about as long as my usual salad. So it is good. I figured 6 pts.

Just about anything you want. I like mine with some salt and a fork. I too add it for the awesome benefits and put the pit in my smoothies for a full days worth of soluble fiber. You can't tell it is in there with a Vitamix. I got the idea from a Vitamix demo at Costco on YouTube. Avocados are awesome! Wish I had a tree in my yard.

I'd like to try avocado in bread, like a sub for bananas in banana bread but avocado is not sweet like a banana. or maybe use a recipe for zucchini bread but use avocado instead, what do you think?

One of my favorites is a "vegetable sandwich."

Spread hummus on some crusty bread. Add some slices of avocado, cucumber, tomato and spinach leaves. Salt and pepper optional.
