YUM !!! I use the Toll House recipe on the bag of chips. My only changes are to use one TBL vanilla and salted butter (omit adding salt). I bake on parchment paper and it seems to keep the cookies soft and a little firm -- not crispy. I think if you melt the butter it make a crispy cookie ????

I do mix a lot of things I bake by hand plus have to have DH help to stir when my hand starts hurting. Mixing by hand can be a PITA.

You're right - the Crisco definitely makes a 'higher' cookie.

My daughter and I just discovered an awesome chocolate chip cookie recipe, too. It's Joanna Gaine's recipe from her new cookbook and, I"m telling you, the cookies are incredible! She said she discovered two changes that really make the cookies delicious - using only one stick of butter (most recipes seem to call for 2 sticks) and using all brown sugar (rather than a combination of white and brown sugars). These are quite possibly the best chocolate chip cookies we've ever made. Now I'm not sure if this made a difference, but the butter we used was Kerrygold Irish butter. Next time we make this recipe, we may just use a regular brand of butter to see if there's any difference. Joanna's recipe is widely available on the internet. So glad we tried it!

I used to make chocolate chip cookies with half chocolate chips half butterscotch chips for my brother when he had a brain tumor. I took them each trip we made. He loved them. I have not made homemade cookies in 15 yrs since he passed away.

I finally made a batch of these about a month ago. Yesterday I made some more.

@Nightowlz wrote:

@sueeich wrote:

@sueeich

We like KerryGold butter too. I have about a dozen bars in the refrigerator I need to cut in half to vaccum seal & freeze.

I can try this recipe next time using all brown sugar. I know brown sugar helps retain the moisture over white sugar.

These don't taste overly sweet like some cookies.

I used the larger bittersweet chips last time & used the mini semi-sweet chips this time.

We used Trader Joe's semi-sweet chocolate chunks in our cookies. Really good!

LOL!!! After I cook them I put in the microwave to heat up a bit.

I like all that stuff warm out of the oven. Some things don't turn out so well if you cut while still hot though.

My only changes are to use one TBL vanilla and salted butter (omit adding salt). I bake on parchment paper and it seems to keep the cookies soft and a little firm -- not crispy. I think if you melt the butter it make a crispy cookie ????

@withaKIf the butter is melted, then, essentially you'll be adding liquid to the cookie and it will run and burn.
