I like to add 1/4 cup red wine vinegar to my hot, drained potatoes, it's fabulous!

NEVER any eggs!

For three pounds of red potatoes, I also add finely diced red onion, celery, green pepper & about a tablespoon of fresh snipped dill. If I don't have dill, I'll finely chop baby dill pickles. Finally, mix with Hellman's mayo - do not smother in mayo!

My my family loves it!

Enjoy!

This really looks great. I make mine similar but I add a small squirt of dijon mustard & a little bit more of a squirt of yellow prepared mustard. It gives the potato salad just a touch of tang and no one notices that it's mustard.

When I make it for family, I add the onions but for company I don't. Not everyone likes raw onions.

Thanks for sharing

Everyone seems to add their own personal recipe. In addition to potatoes and mayonnaise, I also add hard boiled eggs, chopped onion and bell pepper, sweet relish, a little mustard and ranch dressing. I usually make my potato salad a day ahead. It gives all of the ingredients time to blend together well.

Best thing I've discovered for making potato salad.......

The "baby gold" or "baby red" potatoes that come in net-like bags and seem to be so common in grocery stores these days--I buy them at Aldi's, Kroger, Publix around here.

I like the ones with brand name "Melissa's Baby Dutch Gold".

I use a vegetable peeler to whack off any little "eyes" or dark spots, but do not peel the whole potatoes Then I cut each one in half. before boiling until just tender. (Sure beats dicing a bunch of bigger potatoes.)

From there, my salad usually contains diced onion, green pepper, lots of celery, mayo, two types of mustard and sometimes sweet pickle relish, plus just a small amount of dried dill and/or basil, thyme.......whatever strikes my fancy at the time.

I don't bother adding hard-cooked eggs to potato salad too often anymore.

I also throw olive-oil marinated and seasoned baby potatoes into the pot or baking dish when making pork or beef or chicken dishes.

Highy recommend the baby golds if you haven't tried them yet. They have become a staple in my fridge, where they seem to keep very well for quite awhile. (And yes, I know we're not supposed to store potatoes in the fridge......phooey on that!)

I learned that was due to cooking the potatoes to long. I use to cook them whole, then peel and cut them. Now I always peel and cut them up first about 1 inch or so cubes. After the water boils, I time them for 10 minutes. If after draining them some are to large it's easy to cut them smaller then. It works every time for me. I love potato salad...anybodies...any kind...but my mom's with hardboiled eggs, onion, celery, green pepper, mustard and mayo is my favorite!😋🍴

Oh yeah...I do plan on trying this one!
