      <title>Cranberry Upside Down Cake</title>

      <description>&lt;P&gt;Can't wait until cranberries are in season again!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Cranberry Upside Down Cake&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 box of yellow cake mix&lt;/P&gt;&lt;P&gt;4-5 cups or raw cranberries&lt;/P&gt;&lt;P&gt;2 ½ cups white sugar&lt;/P&gt;&lt;P&gt;1 cup brown sugar&lt;/P&gt;&lt;P&gt;1 stick butter&lt;/P&gt;&lt;P&gt;1 cup walnut halves or pieces&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Preheat oven to 350°.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Slice the stick of butter in thin pieces. Distribute the pieces evenly over the bottom of a 9x12-inch pan, or a large round one. Sprinkle the walnuts over the butter.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Wash &amp;amp; dry the cranberries, and pour them over the nuts. Combine the two sugars, and spread evenly over the cranberries. Mix the cranberries &amp;amp; sugar slightly.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Follow the directions on the box to prepare the yellow cake mixture, and pour it over everything.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Bake at 350° for 40 – 50 minutes, or until a toothpick inserted in the center comes out clean.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Let cool 10 minutes. Then, with a knife, loosen the cake from the edges of the pan, and turn the pan over on a plate. Serve with whipped cream or vanilla ice cream.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

I never use that much sugar in baking. Especially if using a box cake mix, which tends to be sweet to begin with. I would definitely cut down the sugar myself, but I posted the recipe as I found it.&lt;/P&gt;</description>

      <description>&lt;P&gt;I love cranberries and can't wait to try this. Ques. about the amount of sugar.....I am type 2 Diabetic diet controlled for several years. I would love to keep it that way. Any suggestions on how much sugar to use if I didn't want to use what recipe calls for. I certainly will try this. I might also try adding some orange zest. I love the taste of cranberries and orange. Thanks so much for sharing your recipe.&lt;/P&gt;</description>
