    <description>&lt;P&gt;These are in no way authentic empanadas, but they are so easy to make.&lt;/P&gt; &lt;P&gt;2 Cups cooked cubed chicken &lt;/P&gt; &lt;P&gt;2 Cups shredded cheese (Any kind you like will work. I used Monterey Jack)&lt;/P&gt; &lt;P&gt;3 oz cream cheese&lt;/P&gt; &lt;P&gt;1/4 C chopped roasted red peppers (I used the ones in the jar)&lt;/P&gt; &lt;P&gt;1 jalapeno pepper seeded and chopped finely&lt;/P&gt; &lt;P&gt;Combine ingredients in bowl and season with S/P to taste&lt;/P&gt; &lt;P&gt;Using refrigerated pie crust ( for 2 9" pies)&lt;/P&gt; &lt;P&gt;Unroll sheet and cut into 25 3" rounds&lt;/P&gt; &lt;P&gt;Place 1 Tbsp filling in center of each round, brush edges with water and fold in half and seal.&lt;/P&gt; &lt;P&gt;Bake 15 minutes in a 400 degree oven and serve&lt;/P&gt; &lt;P&gt;These can be served with salsa, guacamole or sour cream for dipping.&lt;/P&gt; &lt;P&gt;lasvegasfoodie&lt;/P&gt;</description>
