    <description>&lt;P&gt;1/2 small yellow onion sliced thin&lt;/P&gt; &lt;P&gt;2Tbsp Olive Oil&lt;/P&gt; &lt;P&gt;1lb sweet potatoes. grated&lt;/P&gt; &lt;P&gt;1Tbsp deli style mustard&lt;/P&gt; &lt;P&gt;Preheat over to 350.&lt;/P&gt; &lt;P&gt;Heat oil in large skillet over medium heat&lt;/P&gt; &lt;P&gt;Add onion and cook until soft 5 to 6 minutes&lt;/P&gt; &lt;P&gt;Mix shredded sweet potatoes with onions and mustard&lt;/P&gt; &lt;P&gt;Mold the mixture into separate cups in a muffin pan&lt;/P&gt; &lt;P&gt;Bake for 30 to 35 minutes or until crisp&lt;/P&gt; &lt;P&gt;We had these for breakfast filled with scrambled eggs and crumbled bacon. I think you could fill these with anything you like chicken salad. potato salad or whatever you like. They were really good.&lt;/P&gt; &lt;P&gt;lasvegasfoodie&lt;/P&gt;</description>
