SUNDAY RESET

Another weekend has come and almost gone.

I made a big pot of veggie beef soup,my fave comfort food.Of course I made sure to make enough for my parents.I had left over rib roast in the freezer, so I cut it up in bite size pieces along with all my favorite veggies.I found using vegetable broth instead of beef broth makes this soup fantastic!

My AC is still on because Illinios weather is still high 80 along with the humidity.I would love to open up my windows but mother nature says not quite yet.

Hope all you Q friends had a nice weekend.Im not really looking forward to this upcoming week because I work 6 days and only will have 1 day to run errands and all the other fun stuff.

Yum, homemade beef and vegetable soup is one of my favorites. Enjoy.

During the holidays we'll rotisserie a prime rib and with the leftovers will make a prime rib barley and vegetable soup, so delicious.

Almost like the soup better than the main meal lol.

@Luvsmyfam - I thought you cut your days back to 3 or 4 a week? Did you go back to full time?

@Luvsmyfam Your soup sounds delicious! I like the idea of using vegetable broth. I never thought of that. It's a hearty, go-to meal for sure. Enjoy your Sunday!

veggie broth has been my go to for years! very versatile....sounds delish!
