topic Question for HBO/Directv Subscribers... in TV and Movies

I am very interested in watching the show "Game of Thrones". I have not watched any of the seasons although since HBO had a free view weekend I was able to DVR all of season 2 and episode 1 of season 3. (please, no spoilers. I have not watched them yet.) My question is does HBO on demand or HBO go have all the episodes previously aired and can you watch them any time you want? I don't really want HBO added to my bill every month but if I could just add it for 1 month at the end of the season and watch all 3 seasons during that month that would be ideal. Is that possible or do I need to subscribe until season 3 is over?
