Time to harvest the Hatch red chile. When a green chile is left on the plant, it ripens and turns red. The harvest of red chile is underway.

The red chile is slightly sweeter than the green chile and develops its own distinct flavor when used in a sauce. A favorite way to store and keep red chile on hand is to make a ristra. This photo is from the Hatch Chile Store. I have never had a mixed ristra. The bright red one is common here as decor.

I love the chili ristras! My decor is done in hacienda style and a beloved aunt brought me back a lovely large ristra from a trip to New Mexico which I displayed for many years.

I don't remember years past where Hatch chilis were so readily available where I live. This year one grocery store has huge supplies and has been selling them for weeks and I, in turn, have been eating them on everything for weeks.😀

The ristra are for sale at our local landscaping garden store in large quantities, at roadside fruit markets, at retail stores, and at grocery stores.

As far as purchasing from a grower, I do not know if that is a possibility.

Love the Hatch season. My local grocer offers so many delish items with Hatch seasoning. My favorite is hatch turkey patties. I stock up for my freezer.

They also have a great hatch salad dressing, too. So good! Hatch pita chips? Hatch seasoned peanuts in the shell? Don't start, because you can't stop ... lol.

They're really festive looking chiles. Very decorative for a ristra. I didn't know that's what they called such a display. Thanks @On It for some education.

All the hatch green chili's are gone now at my local grocers, but I did find this bottle of Green Hatch Hot Sauce by Melissa's that's labled Mild/Hot. It's pretty good on your favorite Mexican dishes, meats, etc.
