THe inside scenes (except for the kitchen and lower level) are filmed at Highclere Castle which is west of London. The castle is the ancestral home of the Earl of Carnarvon. The current Earl and his wife are friends of Jonathan Fellows who is the major force behind the series. That is how Highclere was chosen for the filming. Now this is the interesting tidbit for history buffs. If you recognize the name Carnarvon you may recall that it was a prior Earl who owned the estate back in the early 1920's who provided the funding for the famous archaeologist Howard Carter who discovered the tomb of Tutankhamen. That same Earl died after a misquote bite that he received while in Egypt at the excavation of the tomb got infected. Supposedly there is a curse on those who dug up the body of the pharaoh and several people involved in the original excavation suffered from early deaths including the Earl.

The reason why the kitchen scenes are filmed on a set is because the basement of Highclere is actually a Egyptian museum with many of the artifacts from Tutankhamen's tomb displayed there.

Now you might find this information useful if you ever appear on Jeopardy.
