From Organic Authority's website:

Purple vegetables and fruits contain compounds called anthocyanins, which give foods the royal hue – anywhere from deep red-orange to striking violet to beautiful blue. Breeding plants with anthocyanins creates purple cauliflower, broccoli, carrots, potatoes and cabbage. Plants that contain anthocyanins are better protected against damage from sunlight, and the color also attracts bees and other pollinators.

Research suggests that anthocyanins may help protect cells, heal the body, decrease inflammation, and lower the risk of heart disease and cancer. Purple cauliflower, broccoli, kale, and red cabbage also contain indoles, nutrients derived from sulfur compounds that may slow the metabolism of carcinogens. Berries are good sources of ellagic acid, a phytochemical that may also help protect cell integrity.

In addition to the anthocyanins, indoles and ellagic acid, these purple vegetables and fruits also contain all the expected nutritional components of fresh produce – such as vitamin A, B2, C, dietary fiber, potassium, and other phenols.

http://www.organicauthority.com/33-Perfectly-Purple-Vegetables-Fruits

From what I understand, it's hybridization, but I know the WHO totally supports the boost in nutrition. From what I'm reading, purple is the "new" green!

I am anxiously awaiting purple cauliflower seeds that I just ordered. I am a huge cauliflower fan, but this variety is gorgeous! I love purple potatoes-both savory and sweet.

I can't say I've noticed a big taste difference, but they certainly brighten your plate!

Poodlepet2

Speaking of GMO...here's something that most people don't know: all kale, including the organic variety, is a gmo food. Kale is actually the result of years of crossbreeding of cabbages. Same goes for broccoli and cauliflower...we created these veggies.

This should be re-worded to say "hybridized" and not gmo. I did not want to infer the wrong meaning.

Holy misinformation!

The only thing I will throw in here is that I have purchased the mixed color organic carrots in a bag and the purple ones are like rocks and I want to say I could not roast the purple ones at all and they didn't cook in a stew either.

Orange, white, yellow are fine. The purple ones seem to have an issue. So I no longer buy the multi color in a bag, I just buy them loose without the purple.

Purple and orange cauliflower are awesome roasted, it looks beautiful on the plate.
