I found organic Kinchi at Costco today in the refrigerator section... A huge container. I had heard of Kimchi but never had tried it before. It is so good for you! It is very low calorie, low carbs diet high in fiber, and very good for or your gut. Here is a good article on the benefits of eating a little kimchi everyday. It is pretty spicy, And a bit high in sodium, so that needs to be taken into consideration. But you do not need to eat very much to benefit from it...I just ate about a 1/4 cup that that was plenty

https://www.organicfacts.net/health-benefits/other/health-benefits-of-kimchi.html

I grew up eating a lot of Japanese food, including some Korean food as well. My Japanese mom had her own kimchi recipe that was sooo good! She's gone now so I just buy kimchi from one of our local Asian markets here. I love the hottest ones.

Our close friend loves kimchi. Everytime he visits us he has it. It is not sold where he lives. Awhile ago my husband bought some and mailed it to him. Well, kimchi has a distinct smell. His post office called him and told him it had just arrived and they needed him to come pick it up as it made the whole post office smell!

I watch a popular YouTuber, “Mommy Tang”, who is vegan & Korean...

and she constantly eats the brand Mother In-Law’s kimchi

with everything. She buys it for convenience but she’s made

cucumber kimchi, water kimchi...and her hands are always stained red!

I got some...it’s good, but it’s a pinch too high in sodium for my tastes.

It is something he eats every now and then, not every week. I have never acquired the taste but love fresh cabbage. and will very occassionally eat sour kraut. I do not do well with very spicy food.

Many years ago my husband was stationed in Korea, guess that is where he learned to like it.
