Sorry, St. Patrick.. no corned beef this year!

I've made corned beef and cabbage every St.Patrick's days since I married an Irishman.

This year, no corned beef.

It occurred to me last year that neither of us likes it. You wouldn't think it would take more than 30 years for me to realize this, but it did.

I think I'll make a pot roast.

I have always made it since we got married and had family and friends over to enjoy the day. This year though we are all going out to a local irish pub and letting them do the work!

LOL, that would be a good reason.

We love it and eat it several times a year. You can always go by the fact that people in Ireland rarely even eat it. It's an American-Irish holiday. I'm also married into the Irish lot, and my son Patrick won't even eat it.

I love corned beef! And I'm not even Irish - I'm French! But I never make it because of health issues - it really isn't very heart-healthy. But last night, I went out to eat with some girlfriends (after seeing the movie "Second Best Marigold Hotel" - very funny!). Decided to splurge and got a corned beef rueben, french fries, and a beer. It was delicious - ate every bite. But........I paid for it. Paced the floor all night with serious indigestion - and am not feeling so good this morning! Besides that - I gained 1.8 lbs of the 3 lbs I lost last week! I ask myself - Was it worth it??????

My daughter has the same reaction as you do--severe tummy troubles. I only make corned beef on St Pats day but this year I'm going to try to get alot of the salt out of it before I cook it. I find it way to salty especially when you order it at a restaurant where EVERYTHING is too salty. I'll report back. Wonder if that will help my DD. Also, your weight gain is prob from water due to the sodium and maybe not so good junk they add into processed meat. I would be so bummed if I lost 3 and gained back some

I always celebrate St Pattys day with the traditional meal minus the corned beef. I just don't like it so I use Freirich porkette or smoked pork butt, something like that. It always used to be recognizable in the meat section wrapped in red paper, now they changed the wrapping though. It's similar to ham and delicious with cabbage. I grew up eating this so never make corned beef, This is one of my most favorite meals, can't wait!

Now THAT is too funny! We enjoy it the first night as a pretty traditional dinner, but in my head I'm already thinking about the leftovers being in a Reuben sandwich

I always cook 2 just so we can have leftovers.

You do know that corned beef and cabbage is an American thing, and not from Ireland at all?

I don't like the smell--it's really strong, so I never make it. Once in a while I'll get a corned beef sandwich from the local deli, which makes the most heavenly sandwiches. Otherwise, no.

Great idea ! In fact one year maybe 15 yrs ago we did just that as most of our family wasnt able to get together, and it was really good .

Last week at Trader Joe's they were sampling a corned beef and melted swiss cheese sandwich on sour dough bread. I loved it and bought all of the ingredients! I have never cooked corned beef although my Mom used to every year. Happy St. Patrick's Day!

Nothing is bad about it, IMO, it does take awhile for corned beef to cook, cabbage doesn't smell that good cooking, but if cooked right, it is delicious, if it is overcooked, it tastes awful!

Corned beef and cabbage is my favorite meal of the year, and my family loves it as well. I cook it in the pressure cooker with the pickling spices in a tea infuser ball until the beef is done. Then I transfer all the cooking liquids to a large pot and cook the veggies (carrots, red potatoes, quartered onions, rutabagas, and cabbage) on the stovetop until they are cooked "al dente." I serve it with Irish Soda Bread and a bit of horseradish. Yum! But boy, the price of corned beef is really high this year. In the past I bought four or five on sale to have in the freezer, but I'm afraid this will be a one-time deal for this year. Erin Go Bragh!

Now that sounds wonderful. I may have to go buy some swiss, I'm making sourdough for tomorrow anyway.

Smiths here had point cuts on sale for$2.99. Even tho I already bought the expensive ones I grabbed a couple more.
