      <description>&lt;P&gt;I'll tell you my secret. I don't melt the cap of cheese on the bowl. I make a huge crouton of garlic and olive oil brushed French bread that I toast in the oven. Then I grate a mix of gruyere and parmesan or fontina or even asiago on the crouton and heat it again or broil it on a foil-lined cookie sheet before I'm ready to serve the soup.&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;I put the soup into a regular soup bowl and drop in the crouton before serving. It's less cheesy and gloppy, less calories and has all the flavor. &lt;/P&gt;</description>

And it's really pretty easy to make except for slicing all those darn onions.
