OK, based on the idea of the Stove Top Stuffing meatloaf, I decided to use the stuffing, crushed up, on chicken thighs and bake them. They are in the oven now and smelling great! All I did was take regular chicken thighs, dip them in an egg wash, and then the stuffing, a small amount so not to waste it. I'm baking them skin side down on a greased full sheet pan at 350 for 45 minutes or so. I'm serving with steamed veggies.

This is a twist of the below recipe that uses cream of mushroom soup as the dip and breadcrumbs as the crust with the soup cooked down for a gravy. They use the very soup they dip the chicken in to make the gravy, which I don't like. I know it boils but possible contamination just freaks me out a bit. I would use a separate bowl with a bit of the mix instead of the whole thing. There are lots of pics and people seem to like it on chicken. You can use any cut and boneless/skinless if you like. I just got regular thighs on sale for super cheap. I will use the left overs in chicken and rice.

http://allrecipes.com/Recipe/Baked-Mushroom-Thighs/Detail.aspx?ms=1&prop25=161703730&prop26=DailyDish&prop27=2015-02-27&prop28=Feature_2&prop29=Title&me=1&eaid=9613921

It just came out and is great, but I will do it without the skin next time since it didn't get as crispy as I wanted.

Hi Tigriss:

This sounds really good! One of my friends is a whiz with using Stove Top in so many different ways too and she keeps raving about mixing it with ground chicken to make yummy stove top burgers. She also add little bits of pepper, mushrooms, anything she happends to have left over. She bakes her burgers, but I am sure frying would be good too.

Thanks for sharing this...I am always looking for ways to shake things up in the kitchen and try something new using ingredients that aren't too expensive and that I typically have on hand.

Burgers, even chicken and turkey, would be great with this. I've only made baked hamburgers in foil packets with slices of potatoes, carrots, and onions, but this would be good to do them as well. It would also make great meatballs. There is another thread on that. The meatloaf recipe really sounds great, but I had thawed chicken, so I used some of it for that.
