    <description>&lt;P&gt;Hate cooking for one. The only thing worse is food shopping for one.&lt;/P&gt; &lt;P&gt;I often rely on the frozen boxes. Sometimes something will catch my eye in the market. I find things in the pantry or 'fridge and have no idea what I had in mind when I bought it.&lt;/P&gt; &lt;P&gt;The upside: dinner is when I get hungry.&lt;/P&gt;</description>

      <title>Cooking for ONE</title>

      <description>&lt;P&gt;Yesterday and today BF was away during lunch, so I was cooking for one.&lt;/P&gt; &lt;P&gt;Yesterday's lunch was a gigantic sweet potato, with a bit of butter and pumpkin pie spice. BF doesn't like sweet potatoes, so it worked out fine for me. &lt;IMG src="http://community.qvc.com/DesktopModules/ExactTarget/Controls/TextEditor/jscripts/tiny_mce/plugins/emotions/img/thumbup.gif" alt="{#emotions_dlg.thumbup}" /&gt;&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;Today's lunch was a simple stir fry- fresh broccoli, half a red pepper, a handful of shredded carrots, and some brown rice.       <description>&lt;P&gt;I cook a lot for the freezer: soups and stews, pasta sauces, and the like. When I cook like that, I always fill smaller containers, too, just enough for one serving. That's for me when my DH is away. So while he's away, I might nuke a small container of pasta sauce for spaghetti or a small container of vegetable soup, something like that. There are small containers of baked ziti that I can heat. With a muffin or a yeast roll, also from the freezer that I can wrap and then thaw in the microwave. I'll make myself a nice pork chop or a B/S chicken breast with a veggie or two or to have with a salad. There's always something in the freezer. &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt;</description>
