    <description>&lt;P&gt;Makes 2 cups  serves 1 or 2..    1 pkg Herb Ox sodium free instant chicken bouillon added to one cup of water in medium saucepan. Heat to dissolve.  Add 1/4 of a large onion or about 3 tbsp. chopped,  1/4  of a chopped carrot,  one small potato cut up into small cubes,  i/2 cup lower sodium ham chopped and 1/2 tsp dried parsley.  Cover and simmer gently until vegetables are soft, about 15-20 minutes. Remove from heat and add 1/4 cup 2% lowfat evaporated milk or nonfat half and half.  Thicken if desired with 1 1/2  tsp cornstarch in a small amt of water. I cook for my elderly mother and  it's always a challenge to find something to give her for lunch, and i find myself giving her the items she will eat over and over. This is great because the recipe is small and we won't have a gazillion leftovers to deal with.  She has to watch the sodium and has a hard time digesting foods that are too high in fat. This is the first time i've tried this recipe and she just devoured it. So now i'm thinking of several ways to vary it.  I'd like to try adding chopped up chicken  and a few noodles. The variations are endless!&lt;/P&gt;</description>
