    <description>&lt;P&gt;A friend recently gave me a couple pounds of fresh lard. &lt;/P&gt; &lt;P&gt;I've been reading that some people are going back to lard (not processed, but freshly rendered) as a shortening product because it is "healthier" by not having chemicals or other ingredients in it.&lt;/P&gt; &lt;P&gt;I grew up on a farm back in the 50's &amp;amp; 60's and my mom rendered lard for our family, but that was a long time ago. &lt;/P&gt; &lt;P&gt;The same friend gave me 18 beautiful fresh brown eggs from their chickens, so I made a batch of cookies where the recipe calls for lard and lots of eggs.  The cookies were wonderful.  They are called biscochitos (hubby's mom's recipe), a Mexican cookie.&lt;/P&gt; &lt;P&gt;I call lard manteca...it sounds nicer than LARD...LOL&lt;/P&gt; &lt;P&gt;Any comments on using fresh lard in place of store-bought, processed shortening products?&lt;/P&gt;</description>
