On 12/27/2014 Barbarainnc said:
Cold Chocolate Snacking Cake
(recipe source: The View From Great Island)

Ok, this chocolate cake is seriously amazing. After you bake it you pop it into the fridge to chill for a couple of hours and then enjoy with a cold glass of milk or a cup of coffee. It's a little after midnight here and I'm having a piece right now with a cold glass of milk while my sweet family is sleeping. I'm indulging in a little 'me' time. If you make this cake, I think you'll find yourself taking a bite while standing in front of the open fridge.

Cake:
3/4 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream

Frosting:
1 cup heavy cream
6 oz good semi sweet chocolate, chopped
1/2 cup confectioner's sugar, sifted
1/3 cup dark cocoa powder, sifted

Directions: Oven: 350F

Spray an 7 1/2 x 11 1/2 brownie pan with cooking spray (you could substitute a 9x9 square pan, but the cooking time will be slightly longer and the cake will be taller).

In a medium bowl, whisk the cocoa, flour, baking powder, and salt; set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then beat in vanilla. Reduce speed to low. Add flour mixture alternating with sour cream, starting and ending with the flour mixture. Spread batter into prepared pan. Tap pan firmly on counter top several times to force out large air bubbles. Bake until a toothpick inserted in center comes out clean, about 30 minutes. Don't over bake.

To make the frosting: Heat the cream in a 2 cup glass measuring cup in the microwave until simmering. Add in the chocolate and let sit for 10 minutes, and then stir until smooth and glossy and the chocolate is all melted. If the chocolate isn't completely melted and smooth, zap it for another 15-30 seconds in the microwave. Add the sugar and cocoa powder and whisk until completely smooth. Pour over the cooled cake. Put the cake in the refrigerator to chill and set the frosting. I like to leave it there for a couple of hours. Serve cold, and store in the fridge.

LoLa

Thanks for posting. I'm going to have to make this!

Notice it doesn't need baking soda or powder, easy to make and we use pure maple syrup. Try to make this as healthy as possible.

Yesterday I made eight loaves of Health Bread! I make it a LOT - love it!

Pink Dogwood,

If you love Tilapia baked in the oven, you should try it steamed in the microwave. Using a microwave steamer, available at shops like Kitchen Collection, for less than $10.00, place a couple tbsp of water in the bottom, add your fillets to the next level and sprinkle them with lime or lemon juice. Then add some Penzeys Ozark seasoning and I also like using some garlic powder and some powdered ginger...but Mrs Camo prefers just Ozark seasoning on hers.

Cover with vented top open about 1/4 way, and microwave on high for 4-5 minutes depending on strength of microwave. It should be white and flaky. Add a little homemade tartar sauce and your all set. Serve with mashed potatoes, stewed tomatoes and green beans or just make a simple fish sandwich. Fast, easy and delicious! I even bought a second microwave steamer so I can do 4 fillets at the same time.

Mrs Camo prepares sides on stove-top while I nuke the fillets.

Enjoy!

Camo

Omgosh! Too numerous to remember all of them. The cream puff cake is surely a favorite, but there were so many others. This is the first place I turn to for cooking/food advice. I know some of the posters are quick to say "Google it!", which I also do, but there's nothing like this forum to get immediate feedback from people I trust.

Thanks everyone!
