I Won the Chili Cookoff at Work with David's Recipe!

We had a chili cookoff at work today. I am not a chili cook whatsoever, so went to David V.'s cookbook (first one) and used his recipe. Ended up winning the people's choice award! Lot's of comments on how good it was!

One of my co-workers made his recipe and brought a crock pot full of it to work one day, and I can say it is truly the best chili I have ever tasted.

Which cookbook of his? I have his first one. Thanks. Geez 1st cookbook, just reread it!

I copied it now and sheesh, it looks easy enough. I'll just need to get the fixings! Thanks for passing the info along. It always helps when we buy cookbooks on the Q and someone tells us what ones they liked. Your group sure did. Congrats!

Here's the recipe as I made it, just slightly different than David's original recipe:

1 1/2 lbs ground beef

1 lb italian sausage

1 large red onion

1 large red bell pepper

1 large yellow bell pepper

1 or 2 cans beef stock

1 12-oz can beer

1 14.5-oz can crushed tomatoes

1 4-oz can chopped mild green chilies

1 small can tomato paste

1 14-oz can red kidney beans, rinsed and drained

1 8-oz can great northern beans, rinsed and drained

1 8-oz can black beans, rinsed and drained

1 envelope chili seasoning

Salt to taste

Brown ground beef and sausage in a large dutch oven. Remove meat and discard drippings. Add onion and bell peppers, saute 5-7 minutes till tender. Stir in meat, 1 can beef stock, beer, tomatoes, tomato paste, mild green chilies, and seasoning. Simmer 1-1 1/2 hrs. If mixture becomes too thick, add the second can of beef stock. Add beans during last 20 minutes of cooking. Add salt to taste.

I improvised a little and did not use the chuck roast, just the ground beef and sausage. Also did not use the real hot peppers, and could not find chili sauce at my store so did not use that.
