      <title>Please, recipe for Red Beans!</title>

      <description>&lt;P&gt;I saw someone cook Red Beans yesterday on DDD, and I am salivating.  I know  she used the usual celery, onions, carrots and garlic, bell pepper.  She used smoked turkey and Andouille as well. I have the smoked turkey, and some turkey Andouille. I didn't see any measurements, or how she put it together.  Can anyone tell me how I would cook this dish?  Do you have a tried and true recipe I could use.  Thank you! Oh, I remember she said something about Slap Yo Mama seasoning, and bay leaf.&lt;/P&gt; &lt;P&gt;Thanks!&lt;/P&gt; &lt;P&gt;Shoe&lt;/P&gt;</description>

Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. (I usually simmer very low for a couple of hours or more.)&lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="background: white; margin: 0.1in 0in 10pt; line-height: 11.4pt;"&gt; &lt;SPAN style="font-size: 8.5pt; font-family: 'Times New Roman','serif'; mso-fareast-font-family: 'Times New Roman';"&gt; Meanwhile, prepare the &lt;STRONG&gt;&lt;EM&gt;&lt;SPAN style="text-decoration: underline;"&gt;rice&lt;/SPAN&gt;&lt;/EM&gt;&lt;/STRONG&gt;. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. I sautee some chopped onion in evoo, add chili pepper, kidney beans, about a 1/2-1 cup of water, and about 1-cup of any kind of salsa we have on hand. I serve this with rice and hot sauce. Please, I KNOW it's blasphemy to be even comparing this to a TRUE recipe, but it does hit the spot. I followed it almost to a tee, because I was a first timer and wanted to start with an original recipe.  The changes I made were. I used red beans from Bobs Red Mill..(they ARE hard to find) instead of kidney beans.  I bought them on Amazon.  Lastly I used smoked turkey drumsticks instead of ham hocks, and spicy chicken Andouille instead of regular Andouille.&lt;/P&gt; &lt;P&gt;I didn't soak beans overnight, as it was a spur of the moment thing!  I brought beans to boil, boiled 3 minutes, removed from heat covered, for 1 hour.  This was perfect as I simmered the smoked turkey at this time in a  separate pan per instructions.&lt;/P&gt; &lt;P&gt;This recipe passed the test with my grand daughter's boyfriend, who is from Louisiana.  We all loved it/&lt;/P&gt; &lt;P&gt;The only problem we had was he insisted we had to mix the rice in with the beans when we ate it.  Hahaha!  We are&lt;BR /&gt; separatists when it comes to this. The recipe was free from Top Secret Recipes, Todd Wilbur (he is sometimes on QVC).&lt;/P&gt; &lt;P&gt;I bought and given many of his books out as gifts.  Go on his website and see if he still offers up some of his recipes for free.  He used to.&lt;/P&gt; &lt;P&gt;There are a lot of recipes that use red beans.
