I'm taking breakfast to a friend recovering from knee surgery. I was thinking about doing something called scrambled egg muffins. You make-up a mixture similiar to a breakfast casserole and put in muffin cups and bake it. Then you can freeze the leftovers and reheat individual servings. I'd also take some fruit and muffins. Just curious if anyone had any better ideas? Thanks.
