    <description>&lt;P&gt;What you need is Rachael Ray's fudge recipe!   It is SO easy, SO good, and you'll get asked for the recipe if you bring it to a gathering.  I'm always asked. &lt;/P&gt; &lt;P&gt;(1)  12-oz. bag semi-sweet chocolate chips&lt;/P&gt; &lt;P&gt;9 oz of butterscotch chips  (that's 3/4 of a bag)&lt;/P&gt; &lt;P&gt;(1)  14-oz. can sweetened condensed milk&lt;/P&gt; &lt;P&gt;(1) teaspoon vanilla&lt;/P&gt; &lt;P&gt;(1)  8 oz. can chopped walnuts&lt;/P&gt; &lt;P&gt;l/2 cup currants&lt;/P&gt; &lt;P&gt;8 x 8 pan lined with saran wrap&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;Preheat a heavy pot on low heat.  Add chips and milk and stir til melted.&lt;/P&gt; &lt;P&gt;Stir in vanilla.  Remove from heat, add nuts and currants, stir, and quickly spread in pan.  It will set immediately.  Cover and chill in fridge.  Cut into very small pieces.&lt;/P&gt; &lt;P&gt;(Currants can be found with the raisins in the grocery store. Don't leave them out! They make this fudge spectacular!)&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;   &lt;/P&gt;</description>

      <description>&lt;P&gt;Here it is:&lt;/P&gt; &lt;P&gt;Fantasy Fudge&lt;/P&gt; &lt;P&gt;1 1/2 sticks butter&lt;/P&gt; &lt;P&gt;3 cups sugar&lt;/P&gt; &lt;P&gt;1 5oz. can &lt;STRONG&gt;&lt;SPAN style="text-decoration: underline;"&gt;&lt;EM&gt;evaporated&lt;/EM&gt;&lt;/SPAN&gt;&lt;/STRONG&gt; milk&lt;/P&gt; &lt;P&gt;1 12 oz. pkg. semi-sweet chocolate chips&lt;/P&gt; &lt;P&gt;1 7 oz. jar marshmallow crème&lt;/P&gt; &lt;P&gt;1 tsp. vanilla&lt;/P&gt; &lt;P&gt;1 cup chopped nuts (optional) I don't use because we don't like nuts in it.&lt;/P&gt; &lt;P&gt;Mix, sugar, butter, and milk in heavy 3 qt. saucepan. Bring to a full boil, stirring constantly. Boil over medium heat till candy thermometer reaches 234* F , stirring constantly to prevent scorching. Remove from heat. Stir in chocolate till melted. Add marshmallow crème and vanilla. Mix well. Stir in nuts, if using. Pour into buttered 9x13" pan. Cool at room temperature. Cut into squares. Makes 3 lbs.&lt;/P&gt;</description>

      <description>&lt;P&gt;I don't care for the softer, creamy fudge. I like the type that is made with a candy thermometer. It has a firmer texture to it. Unfortunately, I'm totally lost when it comes to using a candy thermometer. My candy thermometer will say that it is at the soft-ball stage, but my candy comes out like a rock...so I just buy fudge.&lt;/P&gt; &lt;P&gt;I do have this recipe for Chocolate Peanut Butter fudge that is always popular with my children and grandchildren. (I love it too.)&lt;/P&gt; &lt;P&gt;&lt;STRONG&gt;Chocolate Peanut Butter Fudge&lt;/STRONG&gt;&lt;/P&gt; &lt;P&gt;1 regular size (approx. 3 oz.) dark chocolate pudding &amp;amp; pie filling&lt;/P&gt; &lt;P&gt;1/3 c. milk&lt;/P&gt; &lt;P&gt;1/2 cup creamy peanut butter&lt;/P&gt; &lt;P&gt;1 3/4 c. sifted confectioners' sugar&lt;/P&gt; &lt;P&gt;1/2 teaspoon vanilla&lt;/P&gt; &lt;P&gt;peanuts (optional)&lt;/P&gt; &lt;P&gt;Combine pudding and milk. Add peanut butter. Cook over medium-high heat, stirring constantly, until mixture becomes very thick. Remove from heat. Blend in confectioners' sugar. Stir in vanilla. Pour into buttered  9 x 5 x 3 inch loaf pan. Let stand till cold. Cut into pieces. (Makes about 1 pound.)&lt;/P&gt;</description>

Microwave on high 1 minute.&lt;BR /&gt; Stir down sides of cup and microwave 40 seconds more. Add butter and vanilla.&lt;BR /&gt; Beat until thick, put in on a plate and let it set up.       <description>The secret to no fail fudge is to add a heaping teaspoon of cornstarch to the sugar mixture, which will insure firmness. I learned this trick more than 20 years ago, and have never had a problem since. I shared this with a friend from work who swore she couldn't make fudge that ever turned out right. Now that she's tried my cornstarch secret, she is helping me spread the word to help stop "spoon fudge". Best wishes to you.</description>

I realized I had no vanilla extract, so I brewed a rich cup of peppermint coffee and used a teaspoon full of that instead. Seemed to come out just fine, but you can't really taste the peppermint.&lt;BR /&gt; &lt;BR /&gt; One thing I failed to do was line the pan with foil or butter the pan, so the fudge is really in there. If I do this again, I will line the pan with foil, spray it with cooking spray, then let it set. Once set, I'll turn it out upside down, peel back the foil to cut the fudge into pieces, then store in a plastic container.&lt;/P&gt;</description>
