Sometimes I use frozen green beans (because often you cannot get good fresh ones here) and what I do is, first, take them out of the freezer ahead of time so that they thaw.

Then I add them toward the end of the sauté because they are already cooked.

If I purchase too many (which I've been known to do), I just take what I'll use out for thawing and cooking, then I vacuum seal the rest of the bag and back in the freezer it goes. That way it will still be pristine next year when I want to use them.

I purchased two LARGE bags of frozen whole green beans.

I wanted to cook them with onions and bacon. When I do this with fresh beans I steam them first.

Should I cook the beans before I sautee them with the bacon and onions?

Defrost them?

Advice would be very much appreciated.

Thank you.

I thaw the green beans in a colander, so that any moisture drains off. I cook my bacon and onions in a Dutch oven, then toss the green beans in, season with salt and pepper, heat through, and serve.

I like my frozen green beans SOFT so they don't squeak against my teeth when I bite them. If you do also, cook them first. Steam, boil, nuke, follow package directions.

I put a bag of frozen whole green beans in a skillet, add a little water and a little vegetable oil. Cook til the water evaporates and beans are done. Stir them around in the oil and sprinkle on some garlic powder or add some fresh minced garlic. I don't use a lot of oil, about a tablespoon or so.

Kinda taste like the whole green beans on the Chinese Buffet.

I'd cook them almost-done first and then drain off any liquid and sautee the beans with your bacon and onions to finish. It's really easy to cook frozen green beans in the microwave. Just put them in a covered container and zap for a few minutes. No need to add any liquid; just the moisture from freezing should be plenty.
