topic Help!! I can't cook chicken!! in Kitchen

Every time I make chicken, it comes out dry. There is the exception of when I slow cook it in a crock pot overnight with salsa verde, onion soup mix, and other spices-then it falls apart and shreds beautifully, but I don't always want shredded chicken. Do I always have to cook it very slowly? Does anyone have a recipe that I could follow, that won't dry it out? (I know it's probably me who dries it out, not the recipe, but you know what I mean... ) Any and all help vastly appreciated!!
