      <description>&lt;P&gt;I use tomato puree in my meat sauce.  I always try to buy Cento brand.  Sometimes I will buy San Marzano brand if Cento is not available, but that brand is usually more expensive. &lt;/P&gt;</description>

      <description>&lt;P&gt;I use fresh Roma tomatoes.  I use my Vitamix to crush.  Before I had the Vitamix, I used my food processor.  I just pulse.  I prefer the Roma's because they cook down nicely and make a thicker sauce.  Sometimes I add a can of tomato paste.  I always make sauce in bulk and freeze for meals later.&lt;/P&gt;</description>

If I get a 6 ounce can of paste I fill the whole 6 ounce empty can with wine, usually use a Riesling even though it is a bit sweeter it combats the acidity of the tomatoes and is what we prefer, is what we normally drink. We also prefer a chunky sauce so I don't puree and is why I get crushed instead of puree.&lt;/P&gt;</description>

My mother's mother made it with 6 cans of tomato paste, no puree/crushed/whatever, just all paste.&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;I've made it both ways, but I like it with paste and crushed combined.&lt;/P&gt;</description>

      <description>&lt;P&gt;My grandparents and parents were born in Sicily, so they always made fresh tomato sauce. Since it is a tedious process, I don't do it every year. But when I make my sauce/gravy on Sunday, the brands that I choose are, Pastosa, Cento, Sclafani, or Nina. I use whole peeled, &amp;amp; I pulverize them with my hand blender. Then I brown garlic, onion, and red pepper flakes in oilive oil. I add the tomato paste (browned) and tomato sauce. Some people add water, but I don't. Season with salt, pepper and a tiny pinch of sugar. I do use crushed tomatoes, but not for my Sunday sauce. If you can get San Marzano, they are the best. The Cento and Pastosa are delicious. I cook my sauce/gravy for about 2 1/2 hours.  If I am adding meat, I will let it cook for 45 minutes, add the meat and continue to cook.  You don't have to cook sauce/gravy for hours and hours.  &lt;/P&gt; &lt;P&gt; &lt;/P&gt;</description>
