9 x 13 Pans--What is your favorite recipe for one?

Since we were talking about pans, and everyone likes the 9 x 13 it seems, I thought it would be fun to post our favorite go-to all-time-best recipes for them. Without a doubt, mine is King Ranch Casserole! I switch it up, sometimes use plain tomatoes and hot sauce rather than the Rotel, and may or may not use as much cheese, or a white cheese of some sort. And I often add more chicken--always white breast meat.

I am crazy for this stuff and always have been! I've never had guests turn it down either (unless it was too hot--which happened a time or two)!

What is your favorite? Lasagna runs a second to this one for me!

King Ranch Casserole---from Southern Living Magazine

1 large onion, chopped

1 large green bell pepper, chopped (red is even better--or a mix of the two)

2 tablespoons vegetable oil

2 cups chopped cooked chicken (white meat--and more is better)

1 (10 3/4-ounce) can cream of chicken soup, undiluted

1 (10 3/4-ounce) can cream of mushroom soup, undiluted

1 (10-ounce) can diced tomato and green chiles

1 teaspoon chili powder

1/4 teaspoon salt

1/4 teaspoon garlic powder

1/4 teaspoon pepper

12 (6-inch) corn tortillas

2 cups (8 ounces) shredded Cheddar cheese, divided

Instructions

Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender.

Hmm, I have a lighter version of this recipe and was wondering what to make for dinner tonight. I'm on vacation - made hibachi chicken last night. My BF said something simple tonight. Of course, my lighter version is more labor intensive than what I really want to do today. LOL - but this sounds so good.

Add the onion and cook for 5 minutes over medium-low heat, until translucent. Add the garlic and cook for 1 more minute. Add the sausage and cook over medium-low heat, breaking it up with a fork, for 8 to 10 minutes, or until no longer pink. Add the tomatoes, tomato paste, 2 tablespoons of the parsley, the basil, 1 1/2 teaspoons of the salt, and 1/2 teaspoon pepper. Simmer, uncovered, over medium-low heat, for 15 to 20 minutes, until thickened.

Meanwhile, fill a large bowl with the hottest tap water. Add the noodles and allow them to sit in the water for 20 minutes. Drain. (I skip this step; I don't cook my noodles)

In a medium bowl, combine the ricotta, goat cheese, 1 cup of Parmesan, the egg, the remaining 2 tablespoons of parsley, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.

Ladle 1/3 of the sauce into a 9 by 13 by 2-inch rectangular baking dish, spreading the sauce over the bottom of the dish. Then add the layers as follows: half the pasta, half the mozzarella, half the ricotta, and one 1/3 of the sauce. Add the rest of the pasta, mozzarella, ricotta, and finally, sauce. Sprinkle with 1/4 cup of Parmesan. Bake for 30 minutes, until the sauce is bubbling.

I use mine for everything too! We have King Ranch Casserole a lot (I have an easy and a more complicated recipe). Here are one of our favorite dessert recipes and one of our favorite main casseroles:

APPLE KUCHEN

½ c. butter, softened

1 pkg. yellow cake mix

½ c. flaked coconut

Cut butter into dry cake mix until crumbly.

Crab and apples--now with a salad there's a whole fall party right there in 2 9x13 pans! I think some spinach might be good in the crab lasagna too. Do you think that would work? Not too much though! I guess shrimp would work too because good crab is hard to come by around here.

Breakfast strata is my favorite for a 13x9 dish. I was just looking for an easy seafood lasagna so post #11 caught my attention. I'd like to add some sliced mushrooms with the tomato, but other than that, I'm not going to change a thing.

I think some spinach might be good in the crab lasagna too. Do you think that would work? Not too much though! I guess shrimp would work too because good crab is hard to come by around here.

I've never tried it with spinach. It would probably be good! I've also never used shrimp, but I have used imitation crab and that has worked very well.

I make the crab lasagna every time someone comes to visit, and I've served it for work groups at my home too. It's always been a hit! The mushrooms sound interesting - I love those - but my family doesn't.

2 or 3 boneless chicken brea*ts cut in half or boneless pork chops

2 cans cut green beans (pour liquid off)

3 red potatoes (cut in half and then slices)

1 sweet onion (cut in slices)

1 stick of butter (melt)

2 pkgs dry zesty Italian dressing

Line the chicken down the middle of the pan.

Pour the green beans on one side.

Put the potatoes and onion down the other side. Potato, onion, potato, onion etc

Pour all over the melted butter then sprinkle the dressing all over. I like to add pepper too.

Cover with foil, then bake at 350 for 1 1/2 hours. Remove foil and bake another 15 minutes.

Make a salad or just sliced tomatoes and you have your meal.

So Easy

Since I have to watch my fat, I use fat-free butter.

Sister Golden Hair--wow that sounds wonderful! I'm going to try that with fresh green beans--I'll blanch them or maybe put them in a microwave for a minute first. Maybe also some fresh sliced or canned diced tomatoes (drained) over the chicken too. . . I LOVE tomatoes. Thanks for this--it sounds perfect for us!
