Lately I've been letting my bread dough hydrolize (rests for 30 minutes right after adding the flour and before I start to actually knead it) and am finding it really makes a huge difference in the consistency of the crumb. </P> <P>Am curious if anyone else does this and whether or not the breadmaking machines have a 'rest' period after the mix and before the knead cycle.
