I'm making chicken and dumplings tomorrow, but my oldsters won't consider this a complete dinner. They'll expect something else, but I wouldn't know what to make with it.

Any suggestions? Thank you.

I can't make a green salad - it's not a dad-friendly dish; he has trouble picking it up and chewing it is difficult, as well.

Can I ask you something, wagirl, since you seem comfortable with this dish? I was going to make Ree Drummond's chicken and dumplings recipe, but since I need to cook here at my house and transport the food, I was thinking of making it casserole style and baking it for a few minutes when I get there. Have you ever done anything like that?

I make this pretty often. We love a side dish like rutabagas or peas ( like field peas with snaps or crowders)

I have transported it in the slow cooker as well. Make it in a pot then put it in the slow cooker to travel and keep warm.

Enjoy

For me this is a dish I usually make during the Fall and Winter. Family loves it. I usually serve it with a side dish of butternut squash. I know it's not that season yet, at least not here. Maybe you could find some frozen. I think a baked sweet potato casserole with brown sugar, nutmeg and cinnamon would work also. I am usually stuffed with the chicken and dumplings, but I understand your point.

I agree with others about the addition of a green veggie. Green beans (fresh) would be my first choice.

If you don't want to do a salad, you could also do:

sauteed spinach or escarole

roasted broccoli

marinated veggies- cucumber, grape tomatoes, scallions (a cold salad done with EVOO and vinegar)

roasted asparagus

sauteed zucchini and yellow squash

We love broccoli, just heat it on top of the stove with a little water, salt & pepper and a dab of butter or steam it. Adds a little color to the plate and it is good for you too.
