      <description>&lt;P&gt;Help! I've gotten salads with arborio rice &amp;amp; it's so nice &amp;amp; fluffy, so decided to make some on my own. Instead of fluffy...it turned into a texture of baby food!! I followed directions..stirring continuously &amp;amp; adding water a cup @ a time.&lt;/P&gt; &lt;P&gt;What's the secret of fluffy arborio rice?&lt;/P&gt;</description>

      <description>&lt;P&gt;Are you sure it's arborio rice?  This is the rice used to make risotto which is meant to have a creamy texture, not fluffy.&lt;/P&gt;</description>

I cook risotto a lot and arborio rice is meant to be creamy and a bit loose...the way you want risotto to be.&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;To make a fluffy rice you want a lower starch rice like a long grain....rinsed very well before cooking.&lt;/P&gt;</description>

      <description>&lt;P&gt;It's difficult to make arborio fluffy because it's a high starch short-grain rice that results in a  creamy or sticky outcome. &lt;/P&gt; &lt;P&gt;For fluffy rice, I would choose a long grain rice -- for example basmati, tex-mex or long grain white rice.&lt;/P&gt;</description>

      <description>&lt;P&gt;I made a yellow  rice with saffron using Arborio rice.  I use chicken broth instead of water.  You should heat the liquid &amp;amp; add it 1 cup at a time.  Hope this helps.&lt;/P&gt;</description>
