Barbara, you have the right idea. I cut up cukes and onions in leftover bread & butter pickle juice (store-bought). After only a day in the fridge, they were so crunchy and delicious, much better than the ones that were originally in the jar, IMO! I've been doing that with this same jar of pickle juice for several weeks now. I've decided that the only way I will buy pickles again is when this is used up and I have to buy another jar! I may also try some other kind, like dill. BTW, you may have inspired me to try and make the refrigerator pickles....although this way is SO easy...

I buy pickled beets in a large jar and when we have eaten all the beets I add a can of sliced beets from the grocery store to the juice that is left. After a few days they are almost as good as the originals. I toss the juice after the second use.

I make pickled eggs from the pickle juice. When I have a couple jars of pickle juice leftover, I hardboil some eggs, add some garlic powder, pepper, and a couple dashes of tabasco sauce. Let the eggs marinate about 3 weeks. Delicious!

My husband always uses the juice to make more picked vegetables, just adds whatever we have around.

I haven't done it recently, but years ago I would have intense cravings for tart flavors and I'd add some to tomato juice as a drink.

I too make refrigerator pickles and with the juice I add to my potato salads. Also add to my coleslaw.

My husband gets leg cramps and he uses white vinegar right on the leg as a rub and the cramp goes away. I did not know that you could drink pickle juice and get the same effect. Thanks to those that posted it. I will pass the info along to my husband.

Great ideas! Thanks to all for sharing! I'm definitely going to try some of these. I love vinegar and all kinds of pickled veggies. I recently found there is a local company making pickles and pickled veggies in York, PA called Epic Pickles and they are to die for. I'll use their leftover juice
