Try grating the cheese instead. Hard to cut a block of cheese with a knife. Or try this:

cheese knife

Or try this: Wire cheese slicer

My cheese slicer broke too. It was a wire and worked very slick. My new cheese slicer really only shaves everything too thin. The last few times I used a vegetable carrot slicer that it thick and wavy. It really does a good job but the cuts are wavy yet can be uniform. It probably would make good grilled cheese sandwich. I also use it for cubing cheese for salads.

I've never had or seen what I consider to be a satisfactory cheese slicer. The wire ones do the best job but they don't last long.

I have a Kitchen Aid cheese slicer. It's 8" long - has a handle on the bottom, and the top has a thin wire to slice the cheese. I buy those blocks of cheese at Costco - and it works perfectly. I just googled Kitchen Aid Cheese Slicer - and there's a pic of it - Target has it for $7.99.

I also use knives. I thought it was a trick question at first. Knives work great.

One of my favs is extra sharp cheddar. Sometimes I buy the 2lb block of Tillamook, cut it into 4 or 5 pieces, and vacuum each one separately.

Never had a problem slicing (nope, not gonna use the word 'cutting' - heh) any kind of cheese with a knife.

I get where sarahpanda is coming from. I have in the past had difficulty cutting cheese with a knife. When I buy Tillimook it isn't a large block compared to the huge block I all got from Costco. It is very big. I have one in my refrigerator right now. I know I will probably cut a chunk off and I'm pretty sure it won't be easy. I do have a Cutco Cheese Knife and may try that first. I could not imagine using a cheese slicer on this block.
