      <description>&lt;P&gt;I learned at least three things I didn't know about cooking potatoes, with just one episode. There are so many mediocre cooks on t.v. now, it's such a pleasure to watch the experts.  No drama, just good cooking.&lt;/P&gt;</description>

      <description>&lt;P&gt;Can you imagine what they would say about many of today's ""cooking"" shows?  Especially the QVC ones and most of what they sell? &lt;/P&gt;</description>

I love the cooking shows that are truly instructional.  I have a feeling Julia would hate all these stupid cooking contest shows, and a lot of the other nonsense that is aired on the Food Network.  PBS always had the best cooking shows.&lt;/P&gt;</description>

      <description>&lt;P&gt;They were the Dynamic Duo.  I still watch them everynight on one of our PBS stations.  After Jacques and Julia is Jacques Pepin ""Fast Food My Way"".  Can't get enough of  him - he taught me to make the best scrambled eggs!&lt;/P&gt;</description>

I hope I can remember now. First of all, they showed how to make pomme frites - puffy fried potatoes. He showed how they do it in the restaurant, testing them quickly to see which ones will puff up correctly and which won't so that when a customer orders them they can pop them into the oil and be sure to get good results. I've never seen those before. I'd give it a try, but you need the oil temp to be exactly 300 degrees and I don't have a thermometer.&lt;/P&gt; &lt;P&gt;Julia made garlic mashed potatoes with the KA mixer. I thought if you mashed potatoes in a mixer like that they would get gooey, but hers didn't. She boiled some garlic, then smashed it into some salt with a fork before adding it to the potatoes. When I make garlic potatoes I use roasted garlic. That was new to me.&lt;/P&gt; &lt;P&gt;Jacque made hash brown potatoes like I'd never seen. He baked potatoes, then peeled them and chopped them using an aluminum can that was opened on both ends. He said it was a trick he'd learned years ago. He cooked it on the stove, then baked it until brown - THEN he coated the top with sour cream and some shredded cheese and put it back into the oven to brown. The result was a potato pie that looked SO GOOD!&lt;/P&gt; &lt;P&gt;I love potatoes… can you tell?&lt;/P&gt;</description>

You are right.  I cook mine in an electric steamer - that works great, too.&lt;/P&gt; &lt;P&gt;And faeriemoon, if I'm not mistaken, she didn't even come on the cooking scene until she was 50 years old.&lt;/P&gt;</description>

I love that she would ask questions and let the guest reply and Julia would simply say, that is an excellent tip. Julia knew the answer. She always let her guests shine. The chefs of today would blurt out over the guest so the viewer can see how talented the host is and I use that term loosely. I saw her kitchen at the Smithsonian and it was a treat.&lt;/P&gt;</description>
