topic Quick One: How can I use leftover pumpkin pie filling? in Kitchen

Hi Ladies,

No, not the filling from a can, but the liquid concoction that I've made and used for 4 pumpkin pies today and STILL have enough left over for another pie. You know, the solid pumpkin + evaporated milk + eggs + spices mixture. I don't have extra pie crusts. Could I do a crustless version? Can I just pour it into a smaller, greased casserole and bake like a pie (w/out crust)?

Any ideas would be great. My DH LOVES pumpkin pie, so have more pumpkin goodies in the house is not the problem. I just want to know how to use it.

TIA
