I once watched Melissa on the Foodnetwork make them so I had to try them for company (I am not much of a chip of any kind fan). They were so good. Here is the recipe. Very easy.

Kale Chips

1 head kale, washed and thoroughly dried

2 tablespoons olive oil

 Sea salt, for sprinkling

Directions

Preheat the oven to 275 degrees F.

Remove the ribs from the kale and cut into 1 1/2-inch pieces.

The key for crispness success is to buy it prewashed or to wash it and dry completely before baking. Trader Joe's has it prewashed. Preheat oven. Start low about 290 degrees for about 12 minutes, increase to 325 degrees for just a few more minutes. No open oven door but check every so often, dont want them to turn too dark brown.

I make these all the time, and in fact I just made them for lunch today. This is what I do: if using fresh kale I will remove the stem, wash and dry, then place in a single layer on a baking sheet. I sprinkle on some olive oil and sprinkle with a dried herb mixture (I use one that has some sesame seeds in it) and some salt. I bake at 400 (oven door closed) for about 15-16 minutes.

Sometimes I get the baby kale that comes prewashed and packaged (think it's Earthbound Farms brand) or some that Whole Foods has at their salad bar, which is nice as I don't have to wash and dry these.

These are crispy and delicious and I like them better than potato chips which I don't eat anymore.

I put the kale and oil in a large Ziploc and shake like crazy. I love kale chips, but I'll repeat what another poster warned about: don't eat these in public. You will need to immediately brush your teeth. Want to make yourself laugh? Eat these, then smile into a mirror (and then rush to the toothbrush)!
