      <description>&lt;P&gt;We went to a Mother's Day brunch yesterday and they had Chicken Piccata. It was very good. I have never made it and was just wondering if anyone has a good recipe they would share? TIA!&lt;/P&gt;</description>

      <description>I have a great recipe that I adapted from a Veal Piccata recipe; it is from the Williams-Sonoma Steak and Chop cookbook. Use chicken breast cutlets that have been pounded to 1/4 in thickness, and dredge in seasoned flour (1 cup flour with 1 tsp each salt and pepper), followed by an egg wash (2 eggs beaten with a little water), and finally dipped into bread crumbs (I use panko, about 1 cup). Sauté in olive oil (3 Tbs, sometimes I use less) and fry until golden on both sides. Remove the chicken to a dish and keep warm. Pour off all the oil except 1Tbs. Add 1/2 cup white wine to deglaze the pan. Add 1/2 cup chicken stock, the juice of 1 lemon, and 1 Tbs capers that have been rinsed and drained. Bring to a boil and cook, stirring often, until the sauce is reduced by half. Pour the sauce over the chicken and serve immediately. There is also a slightly different Chicken Piccata recipe on the Williams-Sonoma website. We've never been disappointed with any of their recipes and the one on the website is highly rated.</description>
